How to Make Banana Bread with Cake Mix
Step 1: Add everything to a mixing bowl. Grab a large bowl and add in the cake mix, eggs, oil, and bananas. (Sprinkle in some ground flax seed if desired). You can just break the bananas into a few chunks—no need to mash them ahead of time. Or mash them if they aren’t super ripe.
Step 3: Mix It Up. Using an electric mixer, blend everything together on medium speed for about a minute. (Or if you want to do it my hand use a spatula or wooden spoon. You’ll see it come together into a smooth batter.
Step 4: Pour into Pans. Divide the batter evenly between your prepared loaf pans. No need to be perfect—just eyeball it.
Step 5: Bake. Pop the pans into the oven and bake at 350 degrees until a toothpick inserted in the center comes out clean (about 35-40 minutes).
Step 6: Let It Cool. Let the bread sit in the pans for a bit, then transfer to a wire rack to cool completely before slicing.

- Grease or spray two 8×4 loaf pans with non-stick cooking spray.
- Grab a large bowl and add in the cake mix, eggs, oil, and bananas. (Sprinkle in some ground flax seed if desired). You can just break the bananas into a few chunks—no need to mash them ahead of time. Or mash them if they aren't super ripe.
- Mix with an electric mixer on medium speed for 1 minute (or by hand).
- Pour the batter between the two pans.
- Bake at 350 degrees F for 35–40 minutes, until a toothpick comes out clean.
- Cool in pans for 15 minutes before removing from the pans and then let cool completely on wore racks before slicing.
- Slice and serve or wrap and store for a few days in an air tight container with a piece of paper towel in it. I like to wrap and freeze the second loaf.
