My neighbor gave me a bag of apples and a bag of dried cherries last week. I was thankful because our apple tree isn’t doing too well this year. Although my toddler Stella could eat all the cherries in one seating if I let her, I wanted to utilize these ingredients and come up with a new apple dessert.

I love making apple desserts…and easy ones at that. This cherry apple cobbler with cake mix is just what I needed to get in the mood for all things Fall. I looked around online and saw many cobblers that used canned apples…well I wanted to use fresh apples. In the past I have made a peach cobbler over the fire and used boxed cake mix and remembered how easy it was. So in this apple cinnamon cobbler recipe we are simplifying the topping and just using some basic pantry staples for the filling.

Ingredients Needed for this Cherry Apple Cobbler

Apples
Dried Cherries
Sugar
Cinnamon
Flour
Vanilla
Yellow Cake Mix
Sprite (or lemon lime soda)
Butter

How to Make this Apple Cobbler Recipe with Cake Mix

First peel and slice up your apples. I used about 8 small apples so 6 larger would work, too. Slice them into about 1/2 inch pieces. Add them to a 9×13 baking dish (or a bit smaller). Next add the sugar, cinnamon, flour, and vanilla. Give everything a mix with a spatula until well coated.

Then sprinkle in the dried cherries.

Easy Apple Cobbler Step by step

For the Cake Mix Cobbler Topping

In a large mixing bowl, combine the cake mix and 12 oz. of Sprite (or similar). Whisk until well combined and no longer lumpy. Pour this over the apples and spread around.

Cube up some butter and add around the top of the cake mix. Place in your pre-heated oven and bake for about 35 minutes at 350 degrees F. Serve warm as is or with some vanilla ice cream!

Variations

  • White cake mix or spiced cake mix will work, too.
  • Don’t have dried cherries? Leave them out!
  • Can add some caramel drizzled on top!
  • Like nuts? Go ahead and toss some chopped walnuts or pecans in the filling!

Cherry Apple Cobbler with Cake Mix

This Cherry Apple Cobbler with Cake Mix is so easy to assemble with fresh apples, dried cherries, and boxed cake mix.

Ingredients
  

  • 8 small Apples or 6 large
  • 3/4 cup sugar
  • 1/2 tbsp. cinnamon
  • 2 tbsp. flour
  • 1 tsp vanilla
  • 1/2 cup dried cherries

For Cake Mix Cobbler Topping

  • 1 15 oz. Box of yellow cake mix
  • 1 12 oz. can of Sprite
  • 4 tbsp. butter
