Okay I am not going to lie…I saw some lady make a version of these on TIKTOK. She just made the bars and said they are Weight Watchers friendly which is a bonus. But I wanted to spruce them up with a little glaze on top. Still super easy to whip up and incredible moist and flavorful, even is you aren’t a pumpkin fan. My girls and hubby liked them. 🍂 Chocolate Chip Cookie Mix – I used a 17.5 oz package. Any brand will work — just grab your favorite cookie mix from the baking aisle.

🍂 Pure Pumpkin – A 15 oz can of pure pumpkin (not pumpkin pie filling). This keeps the bars soft and perfectly moist.

🍂 Powdered Sugar – Used for the glaze. Adds just the right touch of sweetness on top.

🍂 Milk – Helps thin out the powdered sugar for that smooth drizzle glaze. Any milk works — regular or dairy-free.

How to make this recipe for Pumpkin Bars

Step 1: Mix it up! Grab a medium-sized mixing bowl and toss in your cookie mix and pumpkin puree. Stir it all together with a spatula or wooden spoon until everything’s blended. The batter will be thick — that’s how you know it’s going to bake up nice and soft.

Step 2: Prep the pan. Spray a 9×9-inch baking dish with nonstick spray, then spread the batter evenly into the pan. Take a second to smooth out the top — it helps the bars bake evenly.

Storage:
