One of my favorite things about this recipe is how versatile it is. I love making these Blackstone quesadillas outside on my flat top because I can cook several at once and get perfectly golden, crispy tortillas every time. But if the weather isn’t cooperating, or you don’t have a flat top, they’re just as easy to make in a large skillet on the stovetop.

Ingredients needed for these Meat Lovers Pizza Quesadillas

| 🍕Large flour tortillas– I find this size works best for quesadillas but obviously you can use whatever you want. 🍕Bacon– I used about 1/2 lb since I had some leftover from my Bacon Jam Ham Sandwiches. You could make this easier by using bacon bits if desired. 🍕Italian sausage– We used a mild Italian sausage, pork sausage would work as well. 🍕Pepperoni slices– regular or turkey works. 🍕Pizza sauce– I always have pizza sauce in the house but you can also use marinara, too. 🍕 Mozzarella cheese– I prefer blocks of cheese because they melt better and have less fillers as long as you have an easy cheese grater! |
How to Make Meat Lovers Pizza Quesadillas
Step 1: Cook Meat. Fire up the flat top over low-medium heat and start cooking the Italian sausage and bacon. When the bacon is done, remove and cut/chop into pieces. Add on the pepperoni and sauté for a few.
Step 2: Fill tortillas. Add the tortillas to the other side of the surface on low. Spoon on some pizza sauce, add in the cheese, some cooked sausage and some pepperoni to your liking. Fold tortilla over. Once they are brown to your liking, remove from surface and serve.

Stovetop Instructions
Heat a large skillet over medium heat and cook the Italian sausage. And cook your bacon with method of choice. Then lightly coat your skillet with cooking spray or a little butter. Assemble the quesadilla the same way, then cook for 2-4 minutes per side until crispy and golden with melted cheese in the center. Repeat with the remaining tortillas.
Tips for the Best Pizza Quesadillas
- Cook the bacon and sausage ahead of time for an even quicker meal.
- Don’t overfill the tortillas or they’ll be harder to flip.
- Add the cheese on both the bottom and top of the fillings to help hold everything together.
- Let the quesadillas rest for a minute before slicing so the cheese has a chance to set.
