This Lemon Blueberry Cream Cheese Cake has dollops of cream cheese that sink to bottom. Mike loved it and said it was like a little surprise when he had a bite with the cream cheese! So it is different, but so good!

What do you need for this Lemon Blueberry Cream Cheese Cake?
- Lemon Cake Mix
- 1 box of lemon pudding and milk
- Fresh blueberries
- Eggs
- Whipped topping
- Vanilla Extract
- Vegetable Oil
- Lemon Zest
First start by making the lemon cake mix acording to the box. Using a microplane or vegetable grater, zest 1 lemon and add to the batter.
Then cut the block of cream cheese into chunks and put over batter. Then sprinkle with blueberries and bake
Once the cake is done, let cool and poke holes and make lemon pudding. Spread pudding over cake and then add whipped topping and lemon zest.

Lemon Blueberry Cream Cheese Cake
Ingredients
- 1 box lemon Cake mix
- 3 eggs
- 1 cup water
- 1/3 cup vegetable oil
- 1 lemon zested
- 1 cup blueberries
- 1 8 oz package of cream cheese softened
- 1 box lemon pudding Instant
- 2 cups milk (for pudding)
- 1 tub whipped topping
- 1 tbsp vanilla
Instructions
- Make cake mix according to box (mine called for 3 eggs, 1 cup water, and 1/3 cup vegetable oil.
- Add the lemon zest and mix well.
- Pour batter into a greased 9×13 pan and add cream cheese dollops and blueberries.
- Bake at 350 for about 26 minutes.
- Let cake cool then poke holes using the end of a wooden spoon or similar.
- Make lemon pudding mix (with milk).
- Pour lemon pudding over cooled cake.
- Add 1 tbsp vanilla to the whipped topping and spread over pudding layer.
- Add more blueberries or lemon zest on top for garnish!
