Soft & Chewy Pumpkin Cookies  with pumpkins on cutting board

It has been forever since I have made cookies from scratch, and these Soft & Chewy Pumpkin Cookies turned out so good that I thought I would share with you! These delicious pumpkin cookies are fun for Halloween or even as a different dessert idea for Thanksgiving.

Even if you don’t care for pumpkin flavored things, you will still enjoy these cookies. They basically are sugar cookie meet a little bit of pumpkin spice! I used less sugar than normal cookies and the flavor is light and perfect. Not too sweet but a nice treat.

My 2 1/2 year old daughter likes to help me bake so I asked her what we should make and she said “Halloween cookies”. Well, I looked around to see what we had and I had some leftover pumpkin candies from my Simple Graveyard Bumpy Cake. So I thought pumpkin cookies? Okay, let’s do it.

These pumpkin cookies are super simple to make and I let Sofie push in the pumpkins as a decoration. You don’t have to use the candies, but actually the cookies were really good with those on it! This batch makes 32 cookies so perfect for a party or to hand out to neighbors and friends 🙂

What you need for these Soft & Chewy Pumpkin Cookies

How to make these easy pumpkin cookies

First start by combining all of the dry ingredients in a bowl and whisk until well combined. Then in a separate bowl combine the butter and sugar and beat until fluffy.

Next add the pumpkin, eggs, and vanilla to the butter sugar mixture and beat a little long. Once well combined, slowly add the dry ingredients to to pumpkin mixture and mix longer.

Wet your hands and form dough balls and place on making sheet. Bake at 375 degrees for about 10-12 minutes. After you pull them out of the oven, quickly add the pumpkin candies to the cookies by pushing them down in the center gently.

I sprinkled a little extra sugar on top. Let cool, serve, or store in an air tight container!

Soft & Chewy Pumpkin Cookies

These easy pumpkin cookies are so soft and tasty! Perfect for a nice treat all season long.

Ingredients
  

  • 2 3/4 cups flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 1 cup butter (2 sticks) room temp
  • 1 cup sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 cup pumpkin (about 1/2 a can)
  • 32 pumpkin candies optional

Instructions
 

  • In a medium bowl combine the flour, baking soda, baking powder, and cinnamon. Whisk until well combined.
  • Then in a large mixing bowl using a mixer, beat butter and sugar until soft and fluffy.
  • Then add the pumpkin, egg, and vanilla to the butter mixture.
  • Beat a little longer then add the dry ingredients.
  • Beat until dough forms and well combined.
  • Wet hands and rolls dough into 2 inch balls and place on cookie sheet.
  • Bake at 375 for about 10-12 minutes.
  • Once removed from oven push pumpkin candies into center of cookie.
  • Sprinkle with additional sugar if desired.

Notes

**dough is a little sticky, so wet hands to form dough balls.
