I have another delicious Blackstone griddle recipe for you! Have you heard of a folded quesadilla yet? Well if you haven’t you have to try these Blackstone Folded Breakfast Quesadillas! What is fun about folded quesadillas is that you can customize them however you would like. This breakfast version would be great for when you are camping or have a lazy Sunday when you want to make something different for breakfast!
There are many variations of these folded quesadillas which apparently started trending om TikTok. I have made a taco version and they were great. Well a few Sunday’s ago I decided to give these Folded Breakfast Quesadillas a try out on our Blackstone Griddle. They were super filling and delicious. We love cooking breakfast out on the Blackstone grill because you can cook eggs, bacon, sausage, and pancakes all at the same time. So for these quesadillas we used bacon and ground breakfast sausage. But you can totally do one or the other or use your favorite breakfast meat.

What you need for these Blackstone Folded Breakfast Quesadillas
- Tortillas
- Eggs
- Milk
- Seasonings of choice
- Bacon and or ground breakfast sausage
- Cheese
How to make these folded quesadillas on the Blackstone
First cook up your scrambled eggs to your liking with milk and seasonings of choice. At the same time (on the Blackstone) cook your breakfast meats of choice. Of course you can use whatever griddle you have or even on your cast iron skillet, too!
Then to make the folded quesadilla, cut a slit on one side of the tortilla and then fill sections of the tortilla with cheese, bacon or sausage, and then scrambled eggs. I left the first section empty but if you like a salsa, ketchup, or hot sauce would be a great spot for that. This piece will be the first piece you fold.
Then fold the cut piece over the cheese, then fold the next section over the meat, then fold the last piece over the eggs.
Then add your cooking oil to your griddle and heat over medium. Place the folded quesadillas onto the griddle and heat until browned then flip and cook the other side.
Serve and enjoy hot with more bacon, ketchup, and other breakfast sides that float your boat! Cook up as many people you have. I did one egg per tortilla so I had made 4 folded quesadillas.

Blackstone Breakfast Folded Quesadillas
Equipment
- griddle
Ingredients
- 4 eggs
- 2 tbsp milk
- seasonings of choice
- 4 tortillas
- 1 lb bacon or breakfast sausage
- cheese of choice
Instructions
- Cook the bacon and/or breakfast sausage on your griddle.
- Combine the eggs, milk, and seasonings of choice and cook on the griddle.
For Folded Quesadillas
- Lay tortilla out on clean surface.
- Cut one slit into the right side of the tortilla.
- Then leave the right corner empty (unless adding a sauce).
- Then add cheese to the top left section of the tortilla.
- Then add the cooked meat to the left bottom section.
- Then add the scrambled eggs to the final section.
- Fold the empty section over the cheese. Then fold those sections down over the meat.
- Then fold over the eggs.
- Heat the griddle over medium heat with oil and heat each side of the folded quesadillas until golden brown and cheese is melted.
