Looking for a festive cookie to try this Spring or Summer? Try these Coconut & Strawberry Jam Sandwich Cookies! These sandwich cookies are addicting with a frosting and strawberry jam filling! They may look fancy, but they are actually pretty easy to make.
Sofie and I made these Coconut & Strawberry Jam Sandwich Cookies last year. These would be great for brunch, a tea party (if that is such a thing), or really just a fun new cookie for dessert this Summer. Soft buttery coconut cookies with a frosting and strawberry jam filling and a fun design!

How to make these Strawberry Sandwich Cookies
For the coconut cookies:
In a mixing bowl cream together the softened butter and the sugar until light and fluffy.
Beat in the egg, the vanilla, and the almond extract until everything is well combined.
In a separate bowl combine the flour, coconut, baking powder, and the salt.
Slowly add the dry ingredients to the creamed mixture and mix until everything is well combined.
Form the dough into about 1 inch balls (30 total) and place onto baking sheets.
Use the bottom of a beverage glass that has a decoration on the bottom (dipped in flour) to press the dough down.
Bake at 350 degrees F for about 12-14 minutes on until cooked.
For the filling:
Combine the butter, the powdered sugar, milk, vanilla, and coconut and mix until well incorporated.
Once the cookies are cooled, add a spoonful of the filling to it on the flat side of the cookie and spread.
Add about 1 teaspoon or more of strawberry jam on top.
Place another cookie on top (flat side facing preserves) to make a sandwich and press down.
Repeat until all “sandwiches” are made and enjoy!
Serve them up on a decorative plate to be fancy lol. Enjoy!

- 3/4 cup butter room temperature
- 1/2 cup cane sugar
- 1 egg
- 1/2 tsp vanilla
- 1/2 tsp almond extract
- 2 cups all purpose flour
- 1/2 cup sweetened flaked coconut
- 1 1/2 tsp baking powder
- pinch of salt
For the Filling:
- 1/4 cup butter softened
- 1 cup powdered sugar
- 2 tsp milk
- 1 tsp vanilla extract
- 1 tbsp. flaked sweetened coconut
- 1/3 cup strawberry jam/jelly/preserves
