I made these for myself for a lunch one day and thought it was a good idea to share! They would be perfect for Cinco De Mayo parties, New Year’s Eve, or any gathering. Of course I like to simplify with a tub of your favorite guacamole but you could make your own if desired!

| 🍤 Olive Oil – Just a little to cook the shrimp evenly and prevent sticking. 🍤 Shrimp – I like using 8-10 raw, peeled, and deveined shrimp (tails off), defrosted. Quick, easy, and perfect every time. if you want to use cooked shrimp, still toss in the pan to warm them up with the spices. 🍤 Salt & Pepper – Simple seasoning to bring out all the flavors. 🍤 Chili Powder – Gives your shrimp a little kick. Adjust to taste, because we all handle spice differently! 🍤 French Baguette – Slice it diagonally and toast until golden and crisp. This makes all the difference. 🍤 Southwestern Style Guacamole – Creamy, flavorful, and basically a must-have for this recipe. 🍤 Green Onion – Chopped and sprinkled on top for color and a little freshness. |

Step 1: Cook the Shrimp. Heat your olive oil over medium heat. Toss in the shrimp with salt, pepper, and chili powder. Give them a stir and watch them turn that perfect pink in just a few minutes. Trust me, the smell alone will make your kitchen feel amazing!

- Heat the olive oil up over medium heat in a small pan. Toss in the raw shrimp with the chili powder, salt, and pepper. Give them a stir and let cook until they turn pink.
- While the shrimp are cooking, slice your baguette diagonally. Toast them in the oven or broiler until golden and crisp to your liking. (Just a few minutes)
- Remove from the oven and add a large spoonful of guacamole to each toast.
- Top with the cooked shrimp on each toast and sprinkle with some chopped green onion and serve.
