The Importance of Marinating Flank Steak

Flank steak is a very lean cut of beef and can be quick to dry out while cooking. Marinating this meat helps tenderize, add flavor, and retain juiciness. No need to season afterwards.

Key Ingredients for a Flavorful Marinade

🥩 Olive OilThis is the best choice for marinating with its flavor profile, health benefits, and it helps tenderize the meat.

🥩 Steak Seasoning
– I used a Chicago Style Steak seasoning, but you can use whatever you like.

🥩 Garlic
– I love adding fresh garlic to the marinade but if you don’t have it you can skip it.

🥩 BBQ Sauce– I like to just to just use whatever sauce we have in the fridge. It already has your vinegar in it which helps tenderize meat as well.

🥩 Worcestershire Sauce
– This salty sauce adds a savory taste and the vinegar in it also helps tenderize the meat.

🥩 Flank steak– We had about a 3 lb cut of flank steak from the cow we purchased. This recipe will also work for a skirt steak or other cut of steak before grilling.

I like to prepare the earlier in the day and then it is ready to go for dinner time. So at least for 2 hours but up to 12 hours is perfect. When you are ready to cook it, pull it out of the marinade and cook it!

Cooking Methods for Perfectly Grilled Flank Steak

For this Flank Steak, I seared the meat on our Traeger Flat Top grill. You can absolutely grill on the Blackstone, grill of your choice, or even a cast iron pan. Or Lodge even sells cast iron griddle pans, too!

How long to grill a Flank Steak?

This cut of meat will cook pretty quickly. I seared each side for about 5 minutes. You will want a crust to form. Once the temperature reaches approximately 130-135° for a Medium Rare temperature. I like to use an instant read thermometer for accurate results.

How long should flank steak rest before slicing?

To help the juices redistribute throughout the meat, let the steak rest for at least 5- 10 minutes before slicing.

Tips for Slicing Flank Steak for Maximum Tenderness

You always hear “slice against the grain” well that sounds easy but sometimes it is a little confusing. I have gotten better with this method now that I cook more meats. I thought I would put together a little graphic to help make it easy. Flank steak usually has pretty clear muscle fibers showing to help.

FLANK STEAK SLICING GRAPHIC

To slice the flank steak, determine which way the muscle fibers are running. If the lines are going in one direction, you slice to cut those fibers to help make the pieces more tender. See above graphic. So if the grain looks like lines➡️ in one direction, you want to cut through the lines.

Then serve up your steak warm with your favorite sides such as baked potatoes, my Southwestern Style Cheesy Potatoes, side salad, or grilled vegetables. Of course you a turn the leftovers into yummy steak tacos or whatever way you like to enjoy grilled steak.
