If you love lemon recipes as much as I do, than you need to try these Lemon Cake Mix Muffins! Yes, you read that right. You can make muffins out of a boxed cake mix! And the results are soft, moist, easy muffins every time!
These Lemon Cake Mix Muffins are the perfect bright treat to start your morning off with. My four year old absolutely loves muffins so we have been making different ones lately. We made some mini apple muffins in the Fall so I wanted something for the Summer months. These easy lemon muffins will be perfect to pack up to take to the beach, for a camping trip, or to take to the cottage or cabin.

I love baking from scratch, but with two little ones now I do love me some shortcuts in the kitchen. Cake mixes are great to have on hand for easy dump cakes, cookies, and now these muffins! So grab your favorite Lemon Cake Mix Box and just a few other ingredients- and get baking baby!
How to make muffins from cake mix
To make the muffins all you need to grab out are two mixing bowls and a whisk. In the one bowl, combine the lemon cake mix, flour, and baking powder. Whisk until the dry ingredients are combined.
In the other bowl add the eggs, vegetable oil, and milk. If you have a lemon you can add some lemon zest to this as well. Whisk these ingredients until well combined.
Next pour the wet ingredients into the dry ingredients and continue to stir until it is all mixed together. Fold in the white chocolate chips and then spoon the mixture into your prepared lined muffin or cupcake pan.
Then bake at 350 degrees F for about 18 minutes or until lightly browned and center is cooked. Let cool and enjoy!
Substitutions & Additions:
- You can swap out the white chocolate chips for fresh fruit such as raspberries, blueberries or chopped strawberries!
- Want them a little sweeter? You can make a little glaze on top with powdered sugar, vanilla, and milk.
- Really like lemon? Add some fresh zested lemon to the mix to have them bursting with lemon flavors.
- Want to add a healthy component? Add in some ground flax seed or even chia seeds.

- 1/4 cup flour
- 1/3 cup vegetable oil
- 3 eggs
- 2/3 cup 2% Milk or similar
- 3/4 cup White Chocolate Chips
