Ready for my latest obsession? This Marinated Tomato Salad with Feta is super easy to make, perfect for a light meal, and you can feel good about eating them! These would be great this Summer when you have fresh tomatoes coming our of the garden!

At the restaurant I work at, we started serving a marinated tomato salad to serve along burrata. One day for lunch I just ate the marinated tomatoes but then added some feta and pepperoncinis. The next day I added chicken for a more complete meal. I knew I had to try making this at home so I could share it with you! This Marinated Tomato Salad with Feta will be the perfect light lunch all Summer long or to serve as a side dish at your BBQ’s!

To be completely honest I do not like raw tomatoes. I like to cook with them and don’t mind when they are in a pico de gallo or things like that. So I was surprised that I enjoyed these Marinated Tomatoes as much as I do. Maybe it is because I am pregnant and tend to eat a little healthier or crave better things for my body. But either way these are delicious!

What you need for this simple Marinated Tomato Salad with Feta

How to make these delicious Marinated Tomatoes

First start by chopping up your roma tomatoes. I always use a serrated knife for easy cutting. Then dice up your shallots and mince your garlic.

Then combine the tomatoes, shallots, garlic, olive oil, seasonings, red wine vinegar, and Italia Dressing to the a medium bowl.

Give everything stir so that all the tomatoes are covered in the liquids. Then add the feta and pepperoncini on top. If you are gonna have these sitting over night or for a few days you may want to add the feat and pepperoncini at the end so they don’t get too soggy.

What are shallots?

I like to cook with shallots here and there when you are looking for a more sweet flavor. Shallots are like a small onion but are on the sweeter side. You can find them in the produce section either by the onions or in the cold area but jalapenos, peppers, etc.

What to serve with this Marinated Tomato Salad with Feta?

I like this just as it is or even over spring mix for a delicious salad. This would also be a great dish along side some Grilled Blackened Shrimp, when you smoke a brisket, or grilled chicken!

Marinated Tomato Salad with Feta

Prep Time 10 minutes
Course Appetizer, Lunch, Salad, Side Dish

Ingredients
  

  • 6 Roma Tomatoes chopped
  • 1/4 cup finely diced shallots or sweet onion
  • 1 clove of garlic minced
  • 1 tbsp olive oil
  • salt and pepper to taste
  • 2-3 tbsp Italian Dressing
  • Italian Seasoning or fresh herbs/basil
  • 1/4 cup red wine vinegar
  • 5 pepperoncini's chopped
  • 1/4 -1/2 cup crumbled feta cheese

Instructions
 

  • In a medium bowl add the tomatoes, shallots, and garlic.
  • Sprinkle with some salt, pepper, and Italian seasoning.
  • Stir the ingredients and drizzle with olive oil, Italian dressing, and red wine vinegar.
  • Stir until all ingredients are covered in liquids.
  • Add the pepperoncini and feta and on top.
  • Refrigerate for at least a few hours until ready to serve.

Notes

*the longer the tomatoes marinate, the softer the tomatoes will become. A few hours minimum, best over night.
*Can add the pepperoncini and feta at the end before you serve for better presentation/ less soggy 
*about 6-8 servings as a side or 2-3 servings as a main dish.
