On the lookout for a lighter meal this Summer? Then give these Shortcut Chicken Teriyaki Lettuce Wraps a try! I actually served them two ways, in Romaine lettuce and over white rice, so whatever floats your boat go for it!
Now that I am at home mostly with my girls, I am always trying to create something fast and easy for myself for lunch. Otherwise, I end up eating peanut butter jelly, mac and cheese, or chicken tenders. Not that there is anything wrong with that, but sometimes I want something for me. Now my husband doesn’t eat lettuce so I did serve these Shortcut Chicken Teriyaki Lettuce Wraps two ways. I cooked up rice as well. And I actually ate it both ways for a couple days, too.
What I Love about these Shortcut Chicken Teriyaki Lettuce Wraps
- A Lighter meal
- Customizable
- Loaded with mini sweet peppers
- A little sweet and a little spicy
- Super easy to make with the help of bottled Sesame Teriyaki Sauce
- I have only had it once but kind of of reminds me of P.F. Chang’s Lettuce Wraps
Now I made these chicken lettuce wraps with ground chicken but you absolutely could use ground turkey or even ground beef if you would prefer.
How to make these Chicken Lettuce Wraps
First start by chopping up the mini sweet peppers that you are using and of course I added a jalapeno for a little added flavor.
Then add some olive oil to a pan and heat over medium. Add in the peppers and the ground chicken and cook until no longer pink. Go a head and drain any access liquid from the pan.
Once the ground chicken is cooked and the peppers are slightly cooked add in the bottle of teriyaki sauce. I found ours at Aldi but anything similar will do. And season with a little Sweet Heat Red Pepper Flakes, if desired. Regular red pepper flakes work fine too- but I LOVE THOSE!
Then spoon the mixture into washed Romaine lettuce leaves or over your favorite cooked rice to make it a rice bowl and enjoy!
Are Lettuce Wraps Healthy?
Well I am not gonna say I am the healthiest person. I easy fruits, vegetables, and lots of meat. So my thing is balance. These are a lighter meal if you are serving them in the Romaine lettuce because you are cutting out some of the carbs. In this lettuce wrap recipe, we are getting a dose of veggies from the peppers. But I am sure the bottled sauce is loaded with sodium and sugar.
