Smoked potatoes are a delicious and flavorful twist on the classic spud dish. By infusing the potatoes with a rich, smoky flavor, they take on a whole new level of complexity and taste. These customizable potatoes can be cooked along side the main dish in the smoker, grill, or even over the campfire.

Why I love this Smoked Potato Recipe

I grew up on these foil pack potatoes. My dad would always slice the up, season, and toss them on the grill with our summer dinners. Then we would go on camping trips where we would toss them right on the grate over the fire and cook them that way. I love the simplicity of the potato recipe but also that you can customize to how you like them.

They really do go great with any main meat, burgers, steaks, etc. If you are smoking low and slow, the potatoes work in there. If you are grilling, you just need to cook until the potatoes are soft. And if the bottom ones get a little crispy, that is okay (there’s always someone who likes the crispy ones). And then same over the fire- keep an eye on them and when they are soft pull them.

What You Need for these Smoked Potatoes

  • Potatoes of choice– here I used small Yukon gold.
  • Green pepper– or other sweet bell peppers are great (or jalapeños)
  • Onions
  • Butter
  • Garlic
  • Salt & Pepper-or seasonings of choice
  • Olive Oil– or similar
  • Water
  • Cheese (optional)

You can customize these to your family’s liking. That is why I do one packet more on the plain side with cheese for the kiddos. Or you can put whatever you want in there.

How to Smoke Potatoes on the Traeger

Wash up your potatoes and cut them into thinner slices (about 1/4 inch). The thinner they are the faster they will cook. Lay a few pieces of foil down. I like one to do in one direction and then one in the other. In this recipe, I chose to do two sets of potato foil packets. One with peppers and onions, and one set plain with cheese added at the end. So add in your peppers, onions, garlic, butter, drizzle with a little olive oil, water, and seasonings of choice.

How to make smoked potatoes

Wrap them up and seal completely. Place directly on the grill grates and smoke at 225 for an hour then I juiced it up to 250 degrees F for another hour or so. You can cook higher if you want them done faster but I was smoking a turkey breast at the same time so I went lower.

Once they are close, add on some cheese to your liking and let cook a little longer until fork tender and cheese is melted.

Grill or Camp Fire Instructions

Grill: Follow the same steps as above and place the foil pack on a preheated grill over medium heat and cook for about 30 minutes or until the potatoes are tender when pierced with a fork.

Campfire: Place the packets directly on top of the hot coals or on a grill grate over the fire. Cook for about 30 minutes or so, flipping occasionally, until the potatoes are tender and cooked throughout.

Smoked Potatoes (Smoker, Grill, or Campfire)

These Smoked Potatoes are so easy to prepare, customizable, and they make the perfect side dish to all of your Summer dinners. These foil packs can be prepared on the smoker, grill, or over the campfire.

Ingredients
  

  • 1 1/2 lbs. potatoes
  • 4 tbsp. butter
  • 4 cloves of garlic minced
  • salt and pepper
  • 1/2 green pepper sliced or chopped
  • 1/2 onion slicked
  • olive oil
  • 3 tbsp water
  • cheese optional

Instructions
 

  • Wash up your potatoes and cut them into thinner slices (about 1/4 inch). The thinner they are the faster they will cook.
  • Lay a few pieces of foil down. I like one to do in one direction and then one in the other. Here I made 2 different packets.
  • In one add in half the sliced potatoes, half the garlic, 2 tbsp butter, salt & pepper, green pepper, onions, a little drizzle of olive oil, and about 1 1/2 tbsp water to help the potatoes steam.
  • In the other packet- add in the rest of the potatoes, butter, garlic, salt & pepper, drizzle of olive oil, and about 1 1/2 tbsp water.
  • Wrap the foil up and around the potatoes and seal completely.
  • Add the foil packets right to the smoker grates and smoke at 225 F for 1 hour then you can raise the temperature to 250 F for another hour or so (until fork tender).
  • If you are adding cheese, add the cheese in and let melt for a few minutes longer.

Grill Instructions

  • Follow the same steps as above and place the foil pack on a preheated grill over medium heat and cook for about 30 minutes or until the potatoes are tender when pierced with a fork.

Campfire Instructions

  • Place the packets directly on top of the hot coals or on a grill grate over the fire. Cook for about 30 minutes or so, flipping occasionally, until the potatoes are tender and cooked throughout.
