Smoked Chicken Queso Feature

I have made tons of smoked queso over the years, and I like experimenting with different cheeses and meats. I love this smoked dip with spicy pork sausage and beef, but I thought it would be great with some smoked chicken. And I was right! Perfectly seasoned chicken comes together with creamy cheeses, and a little bit of heat. Best smoked chicken rub

I chose to smoke some chicken breasts with a quick rub of my own with salt, pepper, garlic powder, and chili powder. But you can sprinkle with some taco seasoning, fajita blend, or just some of your favorite BBQ rub. I like Meat Church’s Fajita BBQ Rub, too.

Ingredients Needed for this Smoked Chicken Dip

Chicken Breasts– I used boneless chicken breasts. But you can use thighs, rotisserie chicken, or leftover smoked pulled chicken.

Seasonings– I just combined salt, pepper, garlic powder and chili powder. You can use BBQ rub as well.

Velveeta– I always just grab the store brand because it’s cheaper. I used half of large block (but they sell smaller sizes). If you want to grab the Mexican flavored one- that works, too.

Cream Cheese– I wanted a nice creamy texture so the cream cheese was a great addition. Plus takes a little heat out of the cheese/jalapenos for those who may not like it too spicy.

Pepperjack Cheese-I chose to shred a block of Pepper jack cheese for this recipe. It melted nicely. You can swap for Colby jack, or whatever you want.

Milk-I like to add some milk to thin it out a bit since Velveeta is so thick.

Diced Tomatoes with green chiles– I always have a can of these laying around. They add great texture & flavor. Regular diced tomatoes would work, too.

Jalapeño– I love some fresh diced jalapenos. If you don’t you can skip it. Also pickled jalapeños would work, too.

How to make this Smoked Queso Recipe with Chicken

First trim and season the chicken breasts with salt, pepper, garlic powder, and chili powder. Rub it in. Transfer out to your smoker and let smoke for about 2 hours until the internal temperature comes up to 160 degrees. (it will finish cooking in the cheese mixture). I rolled at 225, but you can go higher if you want it done faster.

How to assemble smoked queso with chicken

Once the chicken is cooked (or close). Pull it in and chop it up (or you can shred it). Then grab your cast iron pan (or aluminum pans work) and add in the rest of the ingredients. Transfer out to the smoker and let smoke for about an hour and give it all a stir.

Continue to cook for about 30 minutes longer until everything is hot throughout. Then serve warm with chips, pretzels, or even bread.

You could get crazy and even serve it as a meal over some Mexican style rice, too! Enjoy!

  • 2 chicken breasts about 1 lb.
  • Salt, pepper, garlic powder & chili or BBQ rub
  • 8 oz. Pepper Jack Cheese shredded
  • 16 oz. Velveeta Cheese, cubed or store brand
  • 4 oz. Cream Cheese cubed
  • 1 10 oz. can of diced tomatoes with green chiles with liquids
  • 1 jalapeno diced
  • 1/2 cup milk
