A few years back I made a Orange Cranberry Smoked Cocktail. It was fun to create while we were chilling outside on a hot Summer day. You may be thinking smoked cocktails? Really? Well if you love using your Traeger pellet grill then you probably love trying fun new things!
What you need for the Smoked Pineapple Recipe
- Whole Pineapple
- Tajin Seasoning
You dont have to season the pineapple if you don’t want to. The Tajin seasoning gives it a little heat and flavor but smoked pineapple by itself is juicy and flavorful, too!
What You need for the Pineapple Margarita Recipe
- Silver Tequila
- Triple Sec or other orange liquor
- Smoked pineapple puree
- Lime
- Agave Nectar
- Sour Mix
- Tajin seasoning (for the rim)
- Jalapeno
If you haven’t had a jalapeno margarita you are missing out! You can absolutely skip if but it is a very subtle taste and makes it SO good. I smoked the jalapeno too 🙂
How to smoke a pineapple on the Traeger
First core the pineapple and cut into slices. I used my corer and then simply pulled the spiral slices open and stuck a skewer through it. Lightly season it with the Tajin seasoning.
Then I placed it on a small rack and transferred it out to the smoker. Smoke the pineapple at 225 degrees F for about 45 minutes to an hour. I added a whole jalapeno on there, too.
How to make the Spicy Pineapple Margarita Recipe
Next bring the pineapple inside and toss it into your blender or food processor. Blend until smooth.
Grab a lime wedge and make a slit. Place on the glass of choice and squeeze gently around the rim. Dip the rim in a little or the Tajin seasoning (or salt if preferred).
Grab out a cocktail shaker (in order to use the strainer) and add in some ice, the tequila, triple sec, pineapple puree, a slice or two of the jalapeno, a squeeze of lime juice, agave, and the sour mix. Place the lid on the shaker and shake it up. Strain into your rimmed glass with ice.
You can add a slice of jalapeno to the glass as well for additional spice flavor as your drink. Garnish with an addition lime slice, too! Sip and enjoy!
How much Pineapple Puree do you get from the smoked pineapple?
My pineapple produced about 1 1/2 cups of pineapple puree. I used 1 tbsp of puree in each margarita I made. Then I froze the rest to use for another day! So you can definitely serve up a big batch of these at a party or even in a pitcher if desired. We actually froze it then used it in some pina coladas, so that will have to be next on my list!
What to do with the smoked pineapple puree?
If you are only using a little bit of the pineapple puree you can toss the rest in a freezer friendly container or Zip-lock bag and freeze until the next time you want to whip up a batch of these Spicy Smoked Pineapple Margaritas!
