Lemon Almond Bars with bite

If you love a good cookie bar recipe then these Lemon Almond Bars are for you! A cookie crust made with almonds is baked then filled with a light lemon flavored gooey filling. The perfect treat for brunch, Summer parties, or just for a dessert for the family.

This easy lemon bar recipe with almonds requires just a few simple ingredients with a few steps. I figured I’d share this in case you were looking for some new Mother’s Day treats for next weekend. I love these Lemon Almond Bars because they are softer than a cookie but denser than a cake. These almond squares embody old-fashioned goodness, flavors, and are made with real ingredients.

I love easy lemon bars but I really enjoyed this almond version for a little spin on a classic. Desserts with almonds create a different flavor and texture. If you would prefer more lemony flavor just ass some more lemon juice and zest.

That is it! Easier than they look! So grab some pantry staples, almonds, and lemons and get to baking these ooey gooey lemon almond bars!

How to make this easy lemon bar recipe with almonds

For the almond crust

First we make the almond crust by zizzing the almonds up in your food processor. Set aside. In a large mixing bowl combine 1/2 cup of the powered sugar and 2 cups all-purpose flour (I didn’t have enough so I used some whole wheat flour too) . Whisk until combined.

Then add in the butter and use a mixer to beat until well combined. Stir in the crushed almonds and the almond extract. Mix well to evenly distribute the almonds.

Press the dough into the bottom of a greased 9×13 baking dish. Bake at 325 degrees F for about 20 minutes. While its baking make the filling.

For the Lemon Filling

In a large mixing bowl, combine the sugar and 1/4 cup all-purpose flour.

Add in the eggs, baking powder, lemon zest and lemon juice. Mix well until thoroughly combined into a smooth, lump-free filing.

Spoon the filling over the hot dough. Spread and smooth evenly.

Place back into the oven and bake for 25 to 30 minutes until golden brown. The center may slightly jiggle.

Allow to cool completely. Slice into bars, then cover them with a generous layer of confectioner’s sugar if desired and more lemon zest if desired.

Enjoy these with coffee, tea, or milk! Make sure to let them cool completely before placing in an air tight container for storage.

Lemon Almond Bars

These Lemon Almond Bars have a light lemon flavor with an almond crust. Great for Spring, Summer, or anytime.

  • 1 food processor or blender

Ingredients
  

  • 1/2 cup powdered sugar
  • 2 1/4 cups flour divided (can use half whole wheat flour too)
  • 2 sticks butter softened
  • 1/2 cup crushed raw Sea Salt Almonds
  • 2 tsp. almond extract
  • 2 cups white sugar
  • 4 large farm fresh eggs or regular (color may be affected)
  • 1 tsp. baking powder
  • 1 tbsp. plus 1/2 tsp. lemon zest divided
  • 1-2 tbsp. lemon juice to taste

Instructions
 

For the Almond Crust

  • Use a food processor or blender to zizz up the almonds. Set aside.
  • In a large mixing bowl combine the powdered sugar and 2 cups of flour. Whisk until combined.
  • Add in the softened butter and use a mixer to beat until it is well combined.
  • Then fold in the crushed almonds and the almond extract. Mix well to evenly distribute the almonds.
  • Pour the into a greased 9×13 baking dish. Press the dough into the bottom of the dish. Bake for about 15 to 20 minutes at 325 degrees F.

For the filling

  • While the crust is baking, combine the white sugar and 1/4 cup of flour in a mixing bowl.
  • Add in the eggs, baking powder, lemon juice and 1 tbsp (or more) of lemon zest. Mix with a spatula until well combined and is lump free.
  • Once the crust is done, pour the filling over the hot crust. Spread evenly.
  • Bake for 25-30 minutes until slightly browned. The center will slightly jiggle.
  • Remove from oven and allow to cool completely. Add some powdered sugar and more lemon zest on top, slice, and enjoy!

Notes

*These bars have just a light lemon flavor. Can add more lemon zest or even more lemon juice for a more lemon tasting filling.
