We have had a super hot Summer here in Michigan…not complaining. But I have been coming up with cool treats for the kids that I feel good about giving them. I saw a few cool whip ice cream sandwiches on Pinterest and knew I had to try them. Most had sprinkles and what not but I wanted to incorporate some fresh strawberries. When the strawberries are cheap, I grab a few packs and try to use them in lot of recipes like my Strawberry Vanilla Jam and even in zucchini muffins!
Ingredients Needed for these Strawberry & Chocolate Cool Whip Ice Cream Sandwiches

🍓Cool Whip/Whipped Topping– 1 tub of whipped topping- found in the freezer section. Of course you can make your own. 🍓Graham Crackers– Just original/honey flavor is what I used. 🍓Fresh Strawberries– A great way to utilize fresh Summer berries! 🍓 Mini Chocolate Chips– I think these worked best but you can use regual or chopped chocolate pieces, too. 🍓Vanilla– you can skip this, I just think it makes the Cool Whip taste more homemade. |
How to make these Homemade Ice Cream Sandwiches
Step 1: Make Filling. In a medium mixing bowl combine the tub of whipped topping, diced strawberries, and vanilla. Mix until well incorporated.
Step 2: Spread Filling. Spoon some of the mixture onto half of the graham cracker. Spread evenly and top with other graham cracker.
Step 3: Perfect the shape. Smooth the sides so that the mixture fills to the edges of the sandwiches.
Step 4: Add chocolate Chips. Dip the sandwiches into a small bowl/plate of mini chocolate chips.

Step 5: Freeze. Place all of the sandwiches into a 9×13 baking dish, using a layer of parchment paper or wax paper to layer. Freeze for at least 4-6 hours before enjoying!

Storage
After they are frozen, you can wrap them in plastic wrap and place in Zip-lock baggies and back into the freezer for easy grab and go snacking! These didn’t last us a week, since my girls LOVED them. But for best taste, after wrapped properly, enjoy within 2-3 months for the best taste!
