I have made naan bread pizzas for dinner before for the kids with regular toppings and always love how they taster and turn out. I wanted to create some new fresh vegetable recipes to kick off the new year… and here we are! You will love these! You can make them smaller and take they to a party like my Mother in law does or make them this size as a nice meal prep lunch idea like I like to do.
I love that traditional crescent roll veggie pizza but I figured I would simplify with not having to bake a crust thats when I came up with these little cold veggie pizzas.
Ingredients Needed for Mini Naan Pizzas

| 🥦 Mini Naan Bread – I used Stonefire Original Mini Naan and they worked great as the base. You can use any brand you like. They also make dipper size as well. 🥦 Chive & Onion Cream Cheese Spread – This adds a creamy layer that holds the veggies in place. And it’s quick and easy. You can use plain cream cheese but I like this flavor. 🥦 Broccoli – Chop into small pieces so it’s easy to sprinkle over the naan. 🥦 Cauliflower – Chop small so it spreads nicely and blends well with the other veggies. 🥦 Mini Sweet Red Peppers – These add a pop of color and a sweet bite. 🥦 Carrots – Adds a nice texture and extra color. 🥦 Shredded Cheddar Cheese – Sprinkled over the top to finish it off. |

How to Make Cold Veggie Naan Bread Pizzas
Step 1: Prep the base. Lay your mini naan breads out on a clean surface or plate.
Step 2: Spread. Generously spread each naan with the Chive & Onion Cream Cheese. This is your base layer that holds everything together.
Step 3: Add veggies. Sprinkle on the chopped broccoli, cauliflower, peppers, and shredded carrots. Spread them evenly so each bite gets a mix of veggies.

Step 4: Finish with cheese. Top everything with a little shredded cheddar cheese.
Step 5: Serve or chill. Enjoy right away, or cover and refrigerate until ready to serve. They hold up great for a few hours, making them perfect for gatherings.

Additions & Substitutions
- You really can add what ever vegetables you like to this.
- Can you handle some heat? How about some chopped jalapeños.
