Adds a little crunch and sweetness when cooked with the steak. 🌮 Fajita or Taco Seasoning – Just enough to coat the steak and peppers. Brings all the flavors together without overpowering. We love this fajita seasoning. 🌮 Salsa – Enough to lightly coat the steak mixture. Helps marinate the meat and peppers while you get everything ready. 🌮 Flour Tortillas – Soft, medium-sized tortillas work best. You’ll crisp them up on the griddle with the cheese. 🌮 Cheese – Shredded cheddar or pepper jack. This is what makes the tacos extra crispy and melty on the edges! |

How to Make Crispy Cheese Steak Tacos on the Blackstone
Step 1: Prep the Steak Mixture. Start by chopping up your cooked steak (or use raw steak if you want to marinate steak for tacos first). Toss it in a bowl with the diced green peppers, fajita or taco seasoning, and enough salsa to lightly coat everything. Let it sit while you heat your cooking surface — this gives the flavors a chance to meld together.
Step 2: Heat Your Blackstone or Cast Iron. Preheat your Blackstone griddle or a cast-iron skillet over medium heat. Add the steak and pepper mixture to one side and cook until it’s heated through and the peppers are tender. This is where all the flavor really comes alive.

Step 3: Cheese Meets Tortilla. On the other side of the hot surface, sprinkle some cheese directly onto the griddle. Place a flour tortilla on top and let the cheese start melting. Spoon some of the steak mixture onto the tortilla, then add a little more cheese. This is the magic step where it starts getting crispy and melty at the same time.

- Cut steak and mix with diced pepper, seasoning, and salsa.
- Preheat Blackstone or cast iron skillet over medium heat.
- On one side of the flat top, cook the steak mixture until heated through and peppers are cooked to your liking.
- On the other side of the surface, sprinkle cheese on the hot surface, place a tortilla on top, add steak mixture and more cheese.
- Fold when cheese crisps and serve with extra toppings.
- Add sliced/cubes uncooked steak to a bag along with the seasoning, pepper, and salsa. Let marinate until ready to cook.
