Okay if you know me by now you know that I love some shortcut recipes. I especially love cake mix recipes. I have made lemon cake mix muffins in the past and figured I would try a blueberry muffin recipe to have around for quick morning snacks for the kids (and myself). My daughter LOVES blueberry muffins and these did not disappoint for a quick and simple recipe.
Ingredients Needed for these Blueberry Cake Mix Muffins

| 🫐 White Cake Mix – This is what makes these muffins so easy. It gives them that soft fluffy texture without needing a bunch of extra ingredients. 🫐 Ground Flax – Totally optional, but I like adding a little for extra health benefits. 🫐 Vanilla – Adds a little extra flavor and makes the muffins taste more homemade. 🫐 Greek Yogurt – This helps keep the muffins really soft and moist. It also works so well in these muffins with greek yogurt because it adds richness without making them heavy plus we are adding some protein to these bad boys! 🫐 Baking Powder – Helps the muffins rise up nice while baking. 🫐 Eggs – Helps hold everything together and gives the muffins structure. 🫐 Melted Butter – Adds richness and keeps the muffins soft. 🫐 Blueberries – The best part. Tossing them in a little cake mix first helps keep them from sinking to the bottom. |

How to Make Cake Mix Blueberry Muffins
Step 1: Prep the blueberries. Start by rinsing your blueberries and add a couple tablespoons of the cake mix in a small bowl with the blueberries. This helps coat the blueberries later so they don’t all sink while baking.
Step 2: Mix the batter. In a large bowl, add the cake mix, flax, vanilla, Greek yogurt, baking powder, eggs, and melted butter. Use a spatula to mix everything together until combined.
Step 3: Fold everything together. Carefully fold the blueberries into the batter so they stay whole and don’t burst too much.
Step 4: Fill the muffin pan. Spoon the batter into lined muffin cups or a cupcake pan. You can make jumbo muffins or regular-sized muffins depending on what you want.
Step 5: Bake. Bake at 350°F for about 18–20 minutes (for the jumbo muffins) until the tops are lightly golden and a toothpick comes out clean.
Step 6: Cool and enjoy. Let them cool for a few minutes before serving. They’re really good warm.

Easy Cake Mix Blueberry Muffins
Ingredients
Method
- Preheat oven to 350°F and line a muffin pan with paper cups.
- Reserve 2 tbsp of cake mix for coating blueberries.
- Mix cake mix, flax, vanilla, Greek yogurt, baking powder, eggs, and melted butter together.
- Toss blueberries with the reserved cake mix.
- Fold blueberries into the batter.
- Fill muffin cups with batter. (Jumbo Muffin Pan size- 10, Cupcake size 12-15)
- Bake for 18–20 minutes for muffin pan (15-18 cupcake size).
- Cool slightly and serve.
