I love some say icebox cakes that come together without any baking required for Summer! We love my Lemon Eclair Cake and also my Strawberries N Cream Eclair Cake…and I knew I had to add a key lime pie version for Summer time. I made this for Memorial Day to test it out and decided it needed a little more lime flavor so make it again to make sure I had the perfect amounts before sharing with you. My daughter LOVED this dessert and so far everyone who had had a slice said it was a winner. So I hope you like it as much as we do.
Now this eclair cake does NOT have pudding in it so the layers are more light and fluffy versus creamy.
Ingredients Needed for this Key Lime Éclair Cake

| 🍋🟩 Graham Crackers– This helps form the layers and give it more of a cake texture. 🍋🟩 Cream Cheese– Regular cream cheese works. 🍋🟩 Sweetened Condensed Milk– To give it the classic key lime pie sweetness. 🍋🟩 Key Lime Juice– I used bottled Key Lime juice for convenience since juicing tiny key limes is quite the task. Plus I love the Nellie & Joe’s Key Lime juice. You can use it in cocktails, marinades and more! 🍋🟩 Lime– Here I use lime zest in the filling and on top at the end. You just need a citrus zester or cheese grater. 🍋🟩 Whipped topping– Whipped topping gets folded into the filling mixture. Addition whipped cream/topping-Optional (but Highly Recommended) for serving and giving it that classic key lime pie taste! |

How to Make Key Lime Pie Éclair Cake
Step 1. Make the Key Lime Filling. In a large bowl, beat the softened cream cheese until smooth. Then add in the sweetened condensed milk, key lime juice, and the lime zest. Mix until well combined.
Step 2: Add the whipped topping. With a spatula fold in the whipped topping. Taste the filling here to see if the lime flavor is enough for you if not add a little bit more.
Step 3: Build the layers. Add a layer of graham crackers to the bottom of a 9×13 pan. I like to break a few small pieces to completely cover the bottom. Then spread a layer of key lime filling. Repeat layers until the pan is full (I did 3 total layers of each) and finish with the filling on top.
Step 4: Refrigerate. Cover and refrigerate for at least 6 hours, preferably overnight.This softens the graham crackers into a cake-like texture
Step 5: Add Zest and graham cracker crumbs. To finish it off add some more lime zest and crushed graham crackers on top.
Step 6: Slice and serve. Slice and add some addition whipped cream of desired and enjoy!

- Don’t skip chilling time—it’s what turns it into “cake”
- Fresh lime zest makes a big difference in flavor brightness
- Use full-fat cream cheese for best texture
- Don’t overdo lime juice or it can get too tart- taste and add to your preference.
- If you want more of a no bake cheesecake texture, add 1 more pack of cream cheese to the filling.

- In a mixing bowl beat the cream cheese until smooth.
- Mix in sweetened condensed milk, key lime juice, and the zest. Blend until well combined.
- Fold in whipped topping until light and fluffy
- Add a layer of graham crackers to a 9×13 baking dish (breaking some small pieces to completely cover the bottom).
- Spread a layer of key lime filling over the graham crackers. Repeat layers until pan is full (3 layers) Finish with filling on top.(note- you will have a few graham crackers left- use to crush for topping).
- Cover and refrigerate overnight (at least 6-8 hours).
- When ready to serve add some crushed graham crackers on top along with some additional lime zest. Slice, serve, and top with whipped cream of desired.
