Are you ready for a fun Summer appetizer? You will love this Spicy Sausage Smoked Queso! This easy queso is made right on the grill or in your smoker and perfect for Summer entertaining. Of course you can make this smoked queso dip recipe any time of they year right on the stove top, too.

Smoked Spicy Sausage Queso

Mike and I just purchased a Traeger Grill which is a wood pellet smoker/grill. We have been seeing super fun ideas to smoke/grill that we have never thought of! Like Smoked Cocktails? And yes we tried some with my Smoked Orange Cranberry Cocktail! I love cooking on it because it is easy to fire up and use.

Why we love this Smoked Spicy Sausage Queso

Easy to make– All you really have to do is cook up the pork sausage, then add in the rest of the ingredients and smoke until melted.

Great Party Appetizer– This smoked queso dip is perfect for entertaining. Spread out some chips, pretzels, or corn Scoops and let everyone dip in while waiting for the main course.

Fun– If you love cooking outside like I do, then making things on your grill or smoker just makes it more fun.

Mike said we had to try doing some smoked queso and he knows that I LOVE QUESO….probably one of my favorite snacks so I knew we needed to give it a try. This smoked queso is great beacuse you can customize it with ingredients that you would like to add to it!!

What is queso

Well- you guessed it. Queso means cheese in Spanish and the term in food (Chile Con Queso) generally describes a dippable cheese made with chiles. This queso recipe used diced tomatoes that already has green chiles in it.

What you need to make smoked queso:

This Spicy Sausage Smoked Queso recipe is so easy and really really good! Just FOUR Ingredients and a little time on your grill or smoker and you can have a fun appetizer!

  • HOT Pork Sausage
  • 1 block White queso (with jalapenos)
  • Jalapeno
  • Can of diced tomatoes with green chiles
  • Cast Iron Pan
  • milk or shredded cheese (optional…see notes)

You may have seen some Velveeta Queso recipes floating around, and I have used regular too. But this Traeger queso uses the Blanco version. I found it at Kroger.

How to make Smoked Queso on the Traeger

First fire up the grill or smoker. In a aluminum pan or cast iron skillet, break up the pork sausage and let smoke/cook for about an hour at 225.

Once the spicy sausage is cooked, then add the block of cheese, diced jalapenos, can of tomatoes, and milk (if using) and close the lid. Let smoke for about 30 minutes with all the ingredients at 225.

After all the cheese is melted we juiced up the heat to about 350 for another 30 minutes.

After all the ingredients are blended well and melted and hot, enjoy with chips or pretzels! This queso is a little thick so you can always add some milk to thin it out as well ( I like it better that way) . I hope you like it!

Additions & Substitutions:

  • If you aren’t a Velveeta fan, you can use half the block then add shredded cheese and some milk.
  • Regular pork sausage or ground beef works well, too
  • Canned jalapenos or green chiles work
  • Can’t find Queso Blanco…regular Velveeta works!

Equipment

  • cast iron pan or aluminum pan

Ingredients
  

  • 1 2 lb block Queso Blanco (with jalapenos) Velveeta or similar
  • 1 16 oz package Hot pork sausage or regular
  • 1 jalapeno diced
  • 1 14 oz can diced tomatoes with green chiles
  • milk Optional (for a thinner consistency)
  • shredded cheese Optional

Instructions
 

  • In preheated grill or smoker, break up the pork sausage in a cast iron pan or aluminum pan.
  • Close the lid and cook for about an hour at 225.
  • Once sausage is cooked, add the rest of ingredients and close the lid and let cook for another 30 minutes at 225.
  • Then let the smoker or grill get to 350 and finish cooking for another 30 minutes. (or until melted)
  • **Can add some milk to help thin out the queso.
  • Serve with chips or pretzels.

*If you want a thinner consistency, you can use half the block of queso and add milk and shredded cheese.
*Feeding a larger crowd? Add another can of diced tomatoes, milk, and shredded cheese to make it go a little further.
