At the restaurant I work at we make a Caprese Salad which consists of fresh sliced tomatoes, mozzerlla, basil, and a balasmic reduction. By adding these ingredients over a bed of fresh spinach, I really enjoyed this for a light lunch.
The cheese and tomatoes pair nicely. After you add the fresh basil there is a flavor explosion! For the dressing I just used olive oil and balsamic vinegar to top it off! But you can always use any vinegarette that you like or even Italin Dressing would be great!
