This is one of my newest favorite things to make for lunch! This Spicy Air Fryer Eggplant Parmesan cooks to perfection quickly in the Air Fryer for a restaurant favorite right at home. Perfectly baked eggplant with jalapenos, sauce, and baked cheese right on top!
I love the eggplant parmesan at the restaurant I work at. One night for my dinner I asked the cooks to make it for me but to add some jalapenos. Well, I loved it so much I started having it all the time and knew I wanted to make it at home in the Air Fryer. This Spicy Air Fryer Eggplant Parmesan is one of my new go to meals.
If you have an Air Fryer you are probably in love with it. We use ours all the time to make Air Fryer Parmesan Ranch Chicken Tenders and Air Fryer Pizza Tots. The possibilities are endless. This spicy eggplant turned out great with the eggplant still nice and crispy instead of soggy which is a hard task for many people to accomplish.
I used our Ninja Digital Air Fryer Oven which has a large tray. So if you are using a different Air fryer that has a smaller basket you may have to do this in smaller batches.
What you need for this Spicy Air Fryer Eggplant Parmesan
- Eggplant (1/2 of a large or 1 smaller eggplant)
- Egg
- flour
- Panko Bead Crumbs
- Jalapenos
- Marinara Sauce
- Cheese
- Red Pepper Flakes (optional)
How to make Spicy Eggplant Parmesan in the Air Fryer
First start by peeling and slicing the eggplant in about 1/4- 1/2 inch pieces. Then dip each piece into flour.
Next dip the floured slices of eggplant into the egg wash. Then dip the eggplant into the panko crumbs.
Place on the Air Fryer basket or tray. Set the Air Fryer to 400 degrees and air fry for eight minutes. (flipping half way)
Once the eggplant in crispy and cooked, rearrange the eggplant in a layered row and add fresh diced jalapenos, sauce, and shredded cheese.
Place back in Air Fryer for another five to six minutes at 400 degrees until the cheese is baked to your liking. I also added some red pepper flakes because I love some heat but you don’t have too! Enjoy! You can serve with pasta and marinara but I ate it just as is!

I love eggplant in this dish because they contain high fiber amounts which helps aid in digestion. Eggplant is also very low in calories. They also have an antioxidant that helps fight cancer cells and other fungus and bacteria! It is amazing what some foods can do 🙂

Spicy Air Fryer Eggplant Parmesan
Equipment
- Air Fryer or Oven
Ingredients
- 1 medium eggplant or 1/2 of a large (i cut off some sketchy parts)
- 1/3 cup flour
- 1 egg
- 1 tbsp cold water
- 2/3 cup panko bread crumbs
- 1/2-1 jalapeno diced
- 2/3 cup marinara sauce
- 1/2 cup mozzarella cheese (or to your liking)
- Red pepper flakes optional
Instructions
- Peel and slice the eggplant into 1/4-1/2 inch pieces.
- Then dip each slice into the flour.
- In a separate bowl whisk together the egg and cold water.
- Then dip the eggplant into the egg wash and then into panko bread crumbs.
- Place in Air Fryer and set cook time for 8 minutes at 400 degrees. Flip half way.
- Once crispy and cooked rearrange the eggplant into a row and top with diced jalapenos.
- Then add marinara sauce and mozzarella cheese.
- Return to Air Fryer and cook for another 5-6 minutes at 400 degrees until cheese is melted and baked to your liking.
- Sprinkle with some red pepper flakes and enjoy!

Delicious! Peeled and sliced 1 med eggplant. Salted and drained. Followed recipe for coating. Used a Chefman air fryer, 2 racks 4 slices each, sprayed olive oil onto breaded coating for crispness. Cooked for 6 mins, flipped 6 more mins, rotated racks, tomato sauce and chees melted in seconds!
