A little bit of cake a little bit of lemon…I made these Easy Lemon Cake Mix Cookies last Spring and am just getting to posting them! So easy, soft, and perfect all Summer long. Once you start making cake mix cookies, you never go back!
A lot of you enjoyed my Very Vanilla Easter Cake Mix Cookies so I figured I would finally post these. It only took a year but that happen sometimes, HAHA! These Easy Lemon Cake Mix Cookies take just FOUR ingredients to make and perfect when you want a quick treat with very little work. And most of us are tired and busy, so that is what we like 🙂
Most of you know by now that we are HUGE lemon dessert lovers over here. A few of our favorites include my Classic Lemon Meringue Pie, Lemon Éclair Cake, and my Lemon Blueberry Cream Cheese Cake. Light, flavorful, and zest…lemon is definitely one of my go to’s!
What you need for the Easy Lemon Cake Mix Cookies
All you need for these easy cake mix cookies are just FOUR ingredients! YES!
- Box of white cake mix (or lemon cake mix for extra lemon)
- Eggs
- Vegetable oil
- Lemon
I mean really, does it get any easier than that? No mixer required, either!
How to make cookies of out boxed cake mix
The reason everyone loves cake mix cookies is for the ease of it! First zest and juice your lemon. I used my little juicer/spiralizer that I love.
Then add your cake mix, eggs, vegetable oil, and lemon juice & zest to a medium mixing bowl. Using a spoon mix until batter forms. If you want a more formed cookie, place the dough into the refrigerator for at least 10 minutes before placing on to cookies sheet.
Spoon dough onto cookie sheet and bake at 350 degrees for about 12 minutes.
Once they are browned on the edge, pull them out. I sprinkled them with a little sugar, too!

Easy Lemon Cake Mix Cookies
Ingredients
- 1 15.25 oz box white cake mix or lemon
- 1 large lemon juiced & zested
- 1/2 cup vegetable oil
- 3 eggs
- sugar optional
Instructions
- Zest and juice the lemon.
- In a medium mixing bowl, combine cake mix, eggs, vegetable oil, and lemon juice & zest.
- Mix with a spoon until batter forms.
- If you want a more formed cookies, place dough in the refrigerator for at least 10 minutes.
- Spoon dough onto cookie sheets (about 24 cookies).
- Bake at 350 degrees for about 11-13 minutes until edges start to brown.
- After you pull them out of the oven, sprinkle with a dash of sugar and enjoy!
