Have you ever tried making cookies with cake mix? It is so easy, fun, and customizable. These Very Vanilla Easter Cake Mix Cookies are perfect for Spring! Change out the pastel colors for any M & M’s all year long, too!

I have only made cookies with cake mix a few times and every time I ask myself why I don’t make them more often. So soft, chewy, easy, and just requires just a few ingredients. I have made lemon cookies, hot cocoa cookies, and green ones last year for St. Patrick’s day!

The best part of cake mix cookies is that they are very customizable. You can add food coloring to match whatever holiday. You can change out the M& M’s, or add whatever your favorite cookie add-ins are!

What you need for these Very Vanilla Easter Cake Mix Cookies

  • Box of vanilla cake mix
  • eggs
  • vegetable oil
  • vanilla
  • Pastel M & M’s
  • Chocolate Chips

How to make these easy cookies with boxed cake mix?

First we start with adding the cake mix, eggs, and vegetable oil to a medium sized mixing bowl. You can just use a spatula or spoon to mix everything up.

Next add in the vanilla and stir a few more times. Then fold in the M& M’s and chocolate chips until just combined. Place the dough in the refrigerator for about 10 minutes to chill the dough as you get your baking pans out. When ready, roll the dough into about 2 inch balls and place onto cookie sheet. This recipe made about 24 cookies. Bake at 350 degrees for about 11-13 minutes until the edges start to brown.

These soft and chewy cookies are super easy to make with cake mix and a few other ingredients!

Ingredients
  

  • 1 15 oz. Yellow Cake Mix
  • 2 eggs
  • 1/2 cup vegetable oil
  • 1 tsp vanilla
  • 1/2 cup Pastel M& M’s or other
  • 1/2 cup chocolate chips

Instructions
 

  • In a medium mixing bowl combine the cake mix, eggs, and vegetable oil.
  • Using a spatula or wooden spoon mix ingredients until batter forms.
  • Stir in the vanilla.
  • Fold in the M& M's and Chocolate Chips until just incorporated.
  • Let the dough chill for about 10 minutes.
  • Roll cookie dough into 2 inch dough balls and place on cookie sheets.
  • Bake at 350 degrees for about 11-13 minutes until edges start to brown.
