Summer will be here shortly and I love creating new no bake desserts that are easy and delicious! This Simple Raspberry Icebox Cake is just that! This old school cake is assembled in a few minutes then just requires some refrigeration. Use some fresh berries to top them off for a light, fluffy, beautiful dessert!
We all know that during the warmer months, we like cool treats that don’t require firing up the oven! This Simple Raspberry Icebox Cake is great for when fresh raspberries are in season (or you can use strawberries, too). This simple no bake dessert is a traditional icebox cake that is made with just a few ingredients and some refrigerator time.
This easy cake is also fun for the kids to help make too if they are looking for something to do this Summer. Sofie helped me do the layers of whipped topping and cookies. What is an Icebox Cake?
An Icebox cake is an old school dessert that was typically made with whipped cream, fresh fruit or nuts, and some type of wafer cookies. I used Vanilla Wafers in this recipe for extra sweetness but any thin wafer type of cookie will do. Once the cake is set in the refrigerator, the wafers expand into a light and fluffy cake like layer! It is amazing!!
What you need for this Simple Raspberry Icebox Cake
- Heavy Whipping Cream
- Sugar
- Vanilla
- Vanilla Wafers
- Raspberries
- OPTIONAL** Baker’s Chocolate or any chocolate for shaving (for garnish)
How to make an Icebox Cake with Vanilla Wafers and Raspberries
First pour the heavy cream into a chilled bowl and whip until the cream comes to stiff peaks. Add in the vanilla and sugar. I added to taste so you can sweetened it up to your liking.
Start making a stack of cookies by spreading whipped cream on a cookie and placing another on top. I would get about 8-10 cookies done before it would get tipsy,
so then would just lay them down in sections into the baking dish. I made three rows with about 25 vanilla wafers in each row. Gently lay all three stacks on their sides like logs, and combine them using more whipped cream.
Spread the remaining whipped cream over the log like icing. Top the cake off with fresh raspberries and shaved chocolate. You could also use coca powder (which I didn’t have or cinnamon).
Chill the cake for a few hours. When ready to serve, slice on a slight diagonal to show off the fun layers!
I sliced mine like little triangles! ENJOY 🙂
What cookies can I use in an icebox cake?
Any thin cookie or wafer would work great in this recipe. So you could use graham crackers, chocolate wafers, chocolate graham crackers, thin chocolate chip cookies, etc. I liked this with Vanilla Wafers for a light and fluffy texture (plus they are just sweet enough).

Simple Raspberry Icebox Cake
Ingredients
- 2 cups heavy whipping cream
- 2 tsp vanilla
- 3-4 tsp sugar to taste
- 1 box Vanilla Wafers about 75 cookies
- 1 cup raspberries 1 pint
- 1 oz Baker's Chocolate for shavings (or any chocolate or cocoa powder)
Instructions
- Pour the heavy cream into a chilled bowl and whip until the cream comes to stiff peaks.
- Then add the sugar and vanilla to taste (if you like it sweeter add more sugar).
- Start making a stack of cookies by spreading whipped cream on a cookie and placing another on top. I did about 8 at a time and then place them on their side in a 9×13 baking dish like a "log"
- Keep adding to these stacks to desired length. I did about 25 cookies in 3 rows.
- Spread the remaining whipped cream over the log like icing.
- Add raspberries on top and grate some chocolate to make chocolate shavings on top!
- Chill the cake for a few hours (at least 4)
- To serve, slice on a slight diagonal to show off the layers.
