I am excited to share these Smoked Mac N Cheese Stuffed Peppers with you all! We had a bunch of green bell peppers ready to go from the garden and I wanted to come up with something new. I cooked these stuffed peppers on our Traeger pellet smoker, but you can definitely bake them or grill them, too.
I don’t make stuffed peppers too often because my dear husband just eats the filling… but these Smoked Mac N Cheese Stuffed Peppers are sure to please the men and the children in your lives. The filling is boxed mac and cheese with ground beef. I used a jalapeno, so if your family doesn’t like them, skip it but really they just add flavor and not too much heat.
Our garden is usually a little bit of a late bloomer… just getting everything in here at the beginning of September! But our bell peppers, jalapenos, tomatoes, and eggplant did very well this Summer. So I like to come up with recipes that make use of our garden. Some of my favorites are our stuffed zucchini boats, air fryer eggplant parmesan, and of course some salsa (also done on the smoker).
What you need for these Smoked Mac N Cheese Stuffed Peppers
- Bell Peppers
- Ground Beef
- Cheetos Zesty Jalapeno Mac N Cheese (or whatever flavor you like)
- Jalapeno
- Beef BBQ Rub ( I like What’s Your Beef )
- Milk & Butter (for the mac n cheese)
- Shredded Cheese
How to make these mac n cheese stuffed peppers on the pellet smoker
First start by washing and cutting the bell peppers in half lengthwise and removing the tops and seeds. I seasoned the peppers with the Beef BBQ Rub.
In a medium sauté pan cook the ground beef with the chopped jalapeno and a little more of the BBQ rub. Drain any grease. Meanwhile, in a separate pot boil the Mac N Cheese noodles according to package. Drain and add to the pan with the ground beef and add the milk, butter, and cheese packet. Mix it all up.
Spoon the mixture into each half of the peppers, sprinkle with some cheese, and place on a foil lined baking pan.
Place in pre-heated smoker (or grill ) and smoke at 225 degrees for about 1 hour and 15 minutes.
Add extra shredded cheese on top and let cook for another 5 minutes. Serve hot and enjoy!
Cooking Options for these stuffed peppers
I cooked this stuffed pepper recipe out on our pellet smoker. But of course you can cook them on your grill, too. Want to bake them? Just follow instructions and Bake at 350 degrees for about 35-45 minutes.

Ingredients
- 4 Large bell peppers or about 6 smaller
- 1 lb ground beef
- 1 jalapeno chopped
- beef BBQ rub to taste
- 1 box Cheetos Zesty Jalapeno Mac N Cheese or regular (made according to box)
- milk & Butter for mac n cheese
- shredded cheese
Instructions
