Well friends, I have a delicious treat for you. This Berry & Apple Upside Down Bundt Cake is perfect anytime of the year! Bursting with fresh berries, apples, and just enough sweetness.
I made this Berry & Apple Upside Down Cake last year for a neighbor’s get to gether and they all raved about it! Yes I have had these photos and recipe laying around for over a year…but it is a process LOL. I can’t wait to make it again when our raspberries start to pop up in the garden!
Anyways, this Berry & Apple Upside Down Bundt Cake has that nice carmelized layer on top, then apples, then berries, and almost a pancake texture cake. Looks fancy, but actually the recipe itself is pretty easy. IMPRESS your guests, family, and friends all year long with this cake!
What you need for this Apple & Berry Upsidedown Bundt Cake:
- Apples
- Blueberries
- Blackeberries
- Raspberries
- Butter
- White & Brown Sugar
- Baking Powder
- Flour
- Eggs
- Milk
How do you make an Upside Down Cake?
Well basically to make an upside down cake, you cook layers of fruit in a syrup at the bottom of a pan. Then after it is cooked you flip it over and serve it with the fruit layer facing up. I made this is a bundt pan because I love the looks of a bundt cake!
How to make this Berry & Apple Upside Down Bundt Cake Recipe:
First prepeare all of your ingredients so they are ready to layer. I peeled and thinly sliced the apples first. Then wash the raspberries, blueberries, and blackberries.
Next melt some butter and pour into with bundt pan. Add brown sugar.
Next you arrange the apple slices around the pan. Then pour into the mixed berries.
For the Batter:
In your stand mixer, combine the butter and sugar. Beaut until light and fluffy. Then add in eggs one at a time and vanilla. Mix until well incorporated.
Then in a separte bowl combine the flour and baking powder and mix. Slowly add in the flour mixture into the wet mixture alternating with the milk.
Pour batter over the berry layer.
Then bake at 350 for about 40 minute or until toothpick comes out clean when inserted in the center. Let cool before flipping onto plate or serving platter. Slie and serve with ice cream whipped topping, or more fresh berries of choice!
Berry & Apple Upside Down Bundt Cake
Ingredients
- For Glaze:
- 3/4 cup butter
- 1/2 cup brown sugar
- 2 apples peeled and sliced
- 1 1/2 cups fresh berries blackberries, raspberries, and blueberries
- For Cake Batter:
- 3/4 cup butter room temperature
- 1 1/2 cups sugar
- 2 cups flour
- 1 1/2 tsp baking powder
- 3/4 cup milk
- 1 1/2 tsps vanilla
- 3 eggs
Instructions
- For Glaze:
- Melt 3/4 cup butter and add to greased bundt pan.
- Then sprinkle the brown sugar over melted butter.
- Arrange the sliced apples around the bundt pan.
- Then layer fresh berries over the apple layer.
To make the batter:
- In stand mixer cream together the butter and sugar until light and fluffy.
- Then add vanilla and beat in eggs one at a time.
- In a seperartae bowl combine flour and baking powder.
- Then slowly add in flour mixture to wet ingredients alternating with the milk.
- Then mix until well combined (do not over mix).
- Pour batter over apple/berry layers.
- Bake at 350 for about 40 minutes.
- Let cool before flipping and removing from pan.
- Slice and serve with more berries, ice cream, or whipped topping.
