Not only am I excited for this Valentine’s Day cake idea, but I am excited because this recipe and post is for a great cause! This is my second year participating in the  Good Cookie Food Blogger’s Valentine’s Event. This fundraiser helps fight against pediatric cancer! How great is that! Last year I made my Cherry Chocolate Chip No Bake Cheesecake so I figured I would stay with the theme. Plus something about cherries plus chocolate screams LOVE to me.

This Cherry Chocolate Chip Cake is super easy to make with just SIX ingredients! Yes you read that right. I kept the cake mix light by just mixing it with a can of Sprite instead of using oil and eggs. And let me tell you… the results are great! So lets check out the recipe for the cherry pie filling cake and then I will tell you all about the fundraiser below!

Easy Cherry Chocolate Chip Cake

How to Make this Cherry Chocolate Chip Cake

First start by spreading the can of cherry pie filling out into the bottom of your 9×13 pan.

Then in a large mixing bowl combine the yellow cake mix with the can of Sprite. Whisk it up until it is well combined. Pour the batter over the cherry pie filling.

Then cube the butter into small pieces and lay over the the cake batter. Then sprinkle the chocolate chips over the batter, too.

Bake the cake according to your box instructions. Mine took about 28 minutes at 350 degrees.

For the Frosting:

So you can totally make your own frosting quickly and easiy but I kept it simple ( you know….2 kids in a crazy house over here). So i just used a can of frosting.

I microwaved it for about 25 seconds until it was pourable and poured it over the cooled cake and sprinkled some more chocolate chips on top. Then cut, serve, and enjoy!

Additions & Substitutions:

  • Want to use chocolate cake mix? GO FOR IT!
  • Like a cream cheese frosting? Add 4 oz. of cream cheese to your can of frosting to make it taste more homemade.
  • Want to load it up? Add more chocolate chips to the batter before you bake it.
  • Don’t have Sprite? You can use Soda water or a lemon lime flavored sparking water. (or you can make it according to the box instructions)

I am so happy to participate in this Food Blogger’s Event! This Fundraiser goes DIRECTLY to research for pediatric kids cancer. And they have been doing this event since 2012! Although this in only my second year participating, I am so excited to help out as much as I can in raising awareness. Kids Cancer has always touched a spot in my heart, and now more than even after having childern of my own I can’t even imagine!

Cancer is the #1 cause of death of children by disease in the U.S. which just breaks my heart. There are 40,000 U.S. children battling cancer right now. The National Cancer Institute’s budget for childhood cancer is less than 4%. It’s such a small number and that’s why I got involved with this event!

Our goal is to raise at least $3000. Because these three companies:

have each pledged to match our donations raised through this campaign up to $3000! That means when we raise $1, it turns into $4!

Cherry Chocolate Chip Cake

This Cherry Chocolate Chip Cake is easy to make with just six ingredients with layers of cherry pie filling, vanilla cake, chocolate chips, and frosting!

Ingredients
  

  • 1 15 oz. Box of Yellow Cake mix or flavor of choice
  • 1 21 oz. Can of Cherry Pie Filling
  • 12 oz. Sprite or flavored soda/sparkling water
  • 2 tbsp butter cut into cubes
  • 1/3 cup chocolate chips plus more on top for garnish
  • 1 16 oz. can of vanilla or white frosting

Instructions
 

  • In a large mixing bowl combine the yellow cake mix and can of Sprite (or similar).
  • Whisk it up until light and fluffy.
  • Spread the can of cherry pie filling into the bottom of a 9×13 baking dish.
  • Then pour the cake batter over the cherry pie filling.
  • Add the cubed butter on top of that and then sprinkle the chocolate chips over the batter.
  • Bake at 350 degrees according to your package mine was about 28 minutes.
  • Once the cake cools, microwave your can of frosting for about 25 seconds and stir.
  • Pour over the cake and add more chocolate chips.
  • Slice, serve, and enjoy!
