I am so excited to share this Chocolate Covered Strawberry Cheesecake with you! This light, fluffy, velvety cheesecake is covered with a nice silky layer of chocolate ganache. A perfect treat for your loved ones!
Mike loves cheesecakes so every once in awhile I try to whip up a new flavor. This Chocolate Covered Strawberry Cheesecake might be one of my favorite recipes to date! Instead of sour cream I used strawberry yogurt and the result is awesome! Almost like a “yogurt whip” by Yoplait. Not as rich as other cheesecakes, just nice and light.
This Chocolate Covered Strawberry Cheesecake recipe is very simple, actually. Make crust, ziz up some fresh strawberries, and then make the filling with just a few ingredients! Then top it off with 2 ingredient chocolate ganache.

How to make Chocolate Covered Strawberry Cheesecake
Using a food processor or blender, grind up the chocolate cookies until fine consistency. Then mix crumbs with melted butter.
Press into a 9 inch spring-form pan. I lined mine with parchment paper for easy removal.
Bake at 350 for 10 minutes. And while its baking combine strawberries with water in your food processor and blend.
Then in your stand mixer beat cream cheese until fluffy. Then add yogurt, pureed strawberries, flour, vanilla, and sugar. Making sure to mix after each addition. Then add eggs one at a time.
Pour over baked crust and bake at 350 for about 50-55 minutes. You can use a water bath, I usually just add a pan of water on the rack below. The center should still be giggly but firm.
Once removed from oven run a butter knife around the edges to prevent cracking as it sets. Wait at least an hour before removing from springform pan and then make the chocolate ganache.
Refrigerate and then serve! Enjoy!!
