Need a quick healthy lunch on these Summer days? I made these Cranberry Tuna Salad Lettuce Boats in just a few minutes! I had some fresh romaine at the house so wanted to make something besides a salad. I felt good after eating these tuna salad boats and the protein from the tuna held me over through the night at work. I had fresh romaine lettuce from the produce stand so decided to use the lettuce instead of bread for a sandwich- and it was perfect!
All you have to do for these Cranberry Tuna Salad Lettuce Boats is whip up some tuna salad with what you like. I used whipped dressing, celery, and dried cranberries. I would have used some onions but I didn’t have any so used some onion powder instead.
Then you mix it all up…
And spoon into romaine leaves
It is simple as that!!
Cranberry Tuna Salad Lettuce Boats
Ingredients
- 2 romaine leaves
- 1 4 oz can tuna
- 2 tbsp whipped dressing Miracle Whip or similar
- 1 stalk celery diced
- 1/4 tsp onion powder or fresh diced to your liking
- 2 tbsp dried cranberries
Instructions
- Dice celery and onions.
- Mix tuna, dressing, celery, onions, and cranberries.
- Spoon into romaine leafs.
- Enjoy 🙂
