My five year old daughter even loved these chicken salad wraps! We enjoyed them in Romaine lettuce, in tortillas, and just with crackers. So whatever way you like to eat it, try it!
I generally try to make myself something for lunch for the week. During the Summer months it is usually a batch of my Cherry Chicken Pasta Salad or Buffalo Chicken Lettuce Wraps. Well I had some grapes and wanted to try chicken salad with apricots. So here is a new, refreshing, and flavorful chicken salad wraps recipe for you!
What you need for these Dijon Chicken Salad Lettuce Wraps
- Canned Chicken (or cooked chicken) – I have always used canned chicken for chicken salad, grew up that way and have no issues with that. Leftover grilled chicken would work, too!
- Celery– celery adds a little crunch and extra nutrients to the chicken salad.
- Grapes– I used purple grapes but green would work, too. Chicken salad with grapes makes it a little sweeter, plus getting some fruit in!
- Dried Apricots– apricots are loaded with Vitamins, fiber, and are great for your skin. They are a little tangy and sweet which makes a perfect addition to the chicken salad recipe. You can find dried apricots by the raisins/other dried fruit.
- Green Onions– Green onions are a nice addition to this recipe. They are a little less bitter and crunchy than regular onions but you can use what you have.
- Mayonnaise– this creamy and tangy condiment brings everything together.
- Honey– A little honey compliments the dijon mustard and the fruits nicely.
- Dijon mustard– Just a little of this mustard gives this recipe a different flavor.
- Salt & Pepper
That is is! Just a few ingredients whipped up in a mixing bowl. The harden part is cutting up the veggies and grapes. Then you are mixing everything together in a bowl and refrigerating! Like I said I like to put my chicken salad wraps in lettuce or tortillas.
How to make this Chicken Salad with Grapes and Apricots
First wash and cut up the celery, grapes, dried apricots, and green onions. Then grab a medium sized mixing bowl and toss all of those ingredients in. Add in the drained canned chicken.
In a separate bowl whisk together the honey, Dijon mustard, mayonnaise, salt, and the pepper. Then pour the dressing over the chicken mixture. Mix all together until well combined. Cover and refrigerate until ready to serve.
When serving time scoop some into washed Romaine leaves or tortillas and enjoy cold.

Ingredients
- 1 cup celery sliced
- 1 ½ cups halved red or green grapes
- ¼ cup dried apricots chopped
- ¼ cup green onions sliced
- 2 12 oz. Cans of Chicken, drained or 3 cups cooked chicken
- ¾ cup mayonnaise
- 2 tbsp honey
- 1 tbsp Dijon mustard
- Salt & Pepper to taste
- Romaine Lettuce
