How to Select Apples for Smoking
Choosing the right type of apples is important for baking so that you can achieve optimal results in your smoked apple crisp. Varieties like Granny Smith or Honeycrisp work exceptionally well due to their firm texture and ability to hold up during cooking. Their tartness also pairs beautifully with the sweetness from brown sugar and cinnamon. But you can also use whatever you have at the house, too.
How to make apple crisp in the smoker
First fire up your smoker to 225 degrees F. While its pre-heating, peel the apples and cut into thin slices. Depending on the size of your apples anywhere form 8-16 slices. Butter your cast iron skillet or pan that you will be using. Pour the apples into the pan.
Next mix the brown sugar, flour, oats, cinnamon, and nutmeg with a whisk in a bowl until combined. Then add in the cold cubed butter. Use to forks or a pastry cutter if you have one to make a crumble topping.
Then pour the topping over the apples.
How long to smoke an apple crisp on a Traeger
Transfer the pan out to the smoker and place the pan of the grill grates. Close the lid and let smoke for two hours at 225 degrees F.
how to smoke apple crisp?
You could easily cook this cast iron apple crisp at a higher temperature your your grill, but I wanted it “smoked” so roll at at 225 degrees for the majority of the cooking process.
At this point your apples should be pretty soft and some liquid at the bottom of you pan. Now its time to crisp up the crisp topping.
Then raise the temperature of the pellet grill to 300 Degrees F and cook for another 30 minutes until the apples are soft to your liking and the topping is “crisp” to your liking as well.
How do you know when an apple crisp is done?
You will know when the apples look “cooked” and you can stick a fork through them effortlessly. Your oats should be firm and the topping should hold when you try to press on it a but.
Best way to serve apple crisp
Carefully take the cast iron off of the pellet grill and serve the apple crisp into bowls with a helping of vanilla ice cream and a dash of cinnamon if you prefer!
Additions & Substitutions:
- You can use Apple Pie Spice versus cinnamon and nutmeg.
- You can swap margarine in place of butter.
- Like it a little more sweet? You can toss your apples in sugar first.
