If you have been reading along, you know that I love incorporating oats into many of my recipes. Both myself and my toddler loved these Healthy Apple Oatmeal Mini Muffins as a quick breakfast in the a.m. or even when I was craving something sweet throughout the day. We have made them twice now! Fresh shredded apples, oats, flax, and cinnamon make these the perfect Fall treat (or anytime of the year).
In an effort to use as many apples as possible this season we tried our hand at some baked apple donuts, some easy apple jelly, and some coffee cake. Well, I had bought a fun mini muffin pan at the store a few weeks ago and realized that I do not have any muffin recipes on the blog! So here you go, my first mini muffin recipe- and I love them! Best part is they come together quickly in one bowl.
I am breastfeeding our newborn baby girl so I added some flax seeds to them as well. So these are a great lactation recipe, too. All you need are some fresh apples and pantry staples. This recipe also dairy free and vegan if that suits your needs, as well!
What you need for these Healthy Apple Oatmeal Mini Muffins
- Apples
- Whole Wheat Flour
- Oats
- Vegetable Oil
- Sugar
- Cinnamon
- Ground Flax Seed (great source of fiber)
- Baking Soda
- Salt
- Water
How to make these Apple Oatmeal Mini Muffins
First start by grating or shredding your apples. I just used my handheld cheese grater.
Then in a medium bowl combine the whole wheat flour, oats, sugar, cinnamon, flax, baking soda, and a dash of salt. Mix it all up until its well combined.
Then add in the vegetable oil and water and mix.
Next fold in the shredded apples. Spoon mixture into the greased mini muffin pan.
How long do you bake mini muffins
Bake the mini muffins at 350 degrees for about 15 minutes. Then pop them out and enjoy.
Can you freeze these muffins?
Yes! I actually wrapped them in sets of two and froze them. Then when I was craving something sweet, I let them thaw or even microwaved them for few seconds.

Ingredients
- 2 apples shredded (about 1 1/2 cups)
- 1 cup whole wheat flour or regular
- 1 cup oats
- dash of salt
- 1 tsp baking soda
- 1 tsp cinnamon
- 1 tsp ground flax seed
- 1/3 cup sugar
- 1/4 cup vegetable oil
- 1/4 cup water
Instructions
- In a mixing bowl combine the flour, the oats, salt, baking soda, cinnamon, flax, and sugar.
- Wisk until well combined.
- Stir in the vegetable oil and water.
- Then fold in the shredded apples.
- Spoon the mixture into a greased mini muffin pan.
- Bake at 350 degrees for about 15 minutes.
