Easter Bunny Cupcake Cake

You may have seen various versions of bunny cakes around Easter. They are super cute and the kids get a kick out of them. Sofie and I love making cupcakes so we decided to make a cupcake version. I used strawberry cake mix as the base and the Bunny is decorated with colored frosting, coconut flakes, and mini Cadbury eggs.

The bunny cake is an all time kid favorite at Easter. Make this cupcake version for Easter dinner, a church pot-luck or your child’s school party. Everyone loves the Easter Bunny cake and you’ll love the ease of serving cutting and utensil free cupcakes!

What you need for this Easter Bunny Cupcake Cake

This cupcake cake may look complicated, but I promise if I can do it you can do it. Really its just assembling in the shape of the bunny and I walk you step by step. Follow these easy directions and you can refer to the photos for additional help.

How to make an Easter Bunny Cupcake Cake

Preheat oven according to package instructions.

Prepare the cake mix according to package instructions. I always like to add an extra egg and some pudding for extra moisture and more of a “homemade taste”.

Line cupcake pans with paper baking cups. Use Easter themed cups for an added festive touch.

Fill the cups to 2/3 full with batter and bake cupcakes according to package instructions.

Scoop about 3-4 tablespoons of frosting (enough for 3 cupcakes into a small bowl. Add 1 drop of green food color, just enough to turn the frosting pastel green. Set aside. NOTE: This frosting will be used to frost the cupcakes making up the bunny’s bowtie/ necklace area.

Remove 1/4 cup of the coconut from the bag and place in a plastic baggie. Add one drop of red food color and work through coconut until coconut develops a pink hue. Set aside. NOTE: This will be used make the pink part of the bunny’s ears.

Once the cupcakes are cooled, frost 20 cupcakes with the vanilla icing, 3 of the cupcakes in the pastel green frosting.

Assembling the pull apart cupcake cake

On a large platter or I used a baking sheet, make a vertical row of three cupcakes as shown.

Next add two cupcakes to each side of the row as shown. You have just created the bunny’s head.

Add an inverted triangle of three cupcakes as shown. You have just made the bottom of the bunny’s ears.

Finish off the bunny’s ears by adding a right side up triangle of three cupcakes as shown. Take one of the white cupcakes and cut into two pieces to fill in the gap in the ears. Now gently press down on the tops of all the cupcakes making up the head and ears. As you do so, you will notice that gaps begin to fill in.

Then spread the frosting around so that all the cupcakes are touching and form as needed to form the bunny.

Decorating the Easter Bunny Cake

Gently sprinkle the pink coconut on the ears in an oval shape to create the inside of the bunny’s ear. Then, take the remaining white coconut and sprinkle over white parts paying special attention to gaps. I just used a little if you like coconut get crazy.

To make a bow tie/necklace, place the three green cupcakes around the botton of the face and nexk area.

Next give your bunny eyeballs, a nose, and mouth with the mini eggs (or jelly beans, tootsie rolls, whatever you have).

Finish by decorating the bunny’s bowtie/ necklace with the remaining mini eggs. Enjoy!

Additions & Substitutions:

  • I used strawberry cake mix but vanilla, white, or even lemon would be great.
  • Want to make your frosting more flavorful and homemade tasting? Add some cream cheese and vanilla.
  • I used the chocolate mini eggs but you could also use jelly beans, the robin eggs candies, tootsie rolls for the eyes, etc. Have fun with it!

  • 1 15.25 oz box of strawberry cake mix or flavor of choice
  • 1 3.4 oz. box instant vanilla pudding mix optional
  • 2 containers of vanilla frosting
  • 1/2 bag of coconut use as much to your liking
  • red & green food coloring
  • 1 small bag of Cadbury mini eggs

Instructions

  • Step 1: Preheat oven according to package instructions.
  • Step 2: Prepare the cake mix according to the package instructions. I added an extra egg and 1 box of vanilla pudding mix.
  • Step 3: Line cupcake pans with paper baking cups.

Now gently press down on the tops of all the cupcakes making up the head and ears. As you do so, you will notice that gaps begin to fill in. Spread frosting around so all is touching.
  • Step 12: Gently sprinkle the pink coconut on the ears in an oval shape to create the inside of the bunny's ear. Then, take the remaining white coconut and sprinkle over white parts paying special attention to gaps.
  • Step 13: To make bow tie or necklace, place the three green cupcakes at the bottom around the face and neck.
  • Step 14: To decorate place the eggs on the face for the eyes, nose, and mouth.
  • Step 15: Finish by decorating the bunny's bowtie/ necklace with the remaining mini eggs. Enjoy!

Notes

  • as noted I added vanilla pudding mix and an extra egg to my cake mix (you can just make it according to the box)
