As the colder weather sets in I love to make soups because we can get a few meals out of it. This Italian Sausage and Tortellini Soup is where its at! This soup is very tasty and filling from the addition of the tortellini.
Everything cooks in one pan for less clean up. I was really impressed with how this soup turned out! When I was at the grocery store I didn’t know what sounded good for dinner. I knew that I wanted to use some of the peppers from the garden and couldn’t decide between a unstuffed peppers type of dish or something like that. I grabbed a few basics, and then I saw the packs of tortellini and thought that this Italian Sausage and Tortellini Soup would be a great idea.
How to make this Italian Sausage and Tortellini Soup
First, start by dicing your peppers, onion, and garlic.
Next over medium heat in a large stock pot, brown the Italian sausage. Add the peppers, onion, and garlic. Cook until no longer pink and veggies are soft and fragrant.
Next you add the vegetable broth, tomato sauce, diced tomatoes, and water.
Then let simmer for about 20 minutes.
Finally add the tortellini right to the soup and let simmer about 5 more minutes until they float. In addition, you can add salt and pepper to taste but the Italian sausage and peppers already have a ton of flavor!
Serve hot and enjoy!
Italian Sausage and Tortellini Soup
Ingredients
- 1 lb ground italian sausage
- 1 red bell pepper chopped
- 1 shallot diced or small onion
- 1 medium banana pepper chopped
- 1 clove garlic minced
- 1 14.5 oz can diced tomatoes Basil, Garlic, Oregano Flavor
- 32 oz. vegetable broth
- 24 oz. tomato sauce
- 3 cups water
- 2 8.8 oz packages of cheese tortellini
- salt and pepper to taste
Instructions
- In large stock pot over medium heat brown meat with peppers, onion, and garlic.
- Drain fat.
- Add the water, tomatoes, tomato sauce and vegetable broth.
- Let simmer about 20 minutes.
- Add the tortellini and let simmer another 5 minutes.
Can I use different flavored tortellini?
Yes ! Any flavor you would like! I actually used 1 package cheese and 1 package sun dried tomato! Whatever floats your boat 🙂
What if I don’t have banana peppers or shallots?
You can use bell peppers, red pepper flakes, a jalapeno…anything to give is an extra kick. A small onion is fine!
Can I use different broth?
Yes! Of course. I just had vegetable broth. Chicken or beef broth will work just fine.
