If you’re looking to elevate your pork chop game, look no further than cooking them on a Blackstone griddle. The flat top surface of the Blackstone allows for even heat distribution and a perfect sear on your pork chops every time. These juicy Blackstone Pork Chops are simple to prepare and cook quickly. You can enjoy them plain or serve them up with some seasoned and beer soaked peppers and onions.
A few months ago we invested in a half of pig, so needless to say- experimenting with different methods of cooking it is on the agenda. We smoked some pork chops and seared them before…but the other night, I just needed a quick dinner. And that is what I love about my Blackstone Griddle. These bone in pork chops were cooked perfectly and my kids even ate them- bonus points.
Note* Of course you can easily cook these in your cast iron skillet or other flat top surface, too.
Why I love Blackstone Griddle Recipes
I truly enjoy cooking outside on a large surface where everything can be cooked at once. It just makes it so much easier, and in the warmer months, the kids play in the drive way- and I cook. Pour a beer, relax, even better. It’s a win-win. Not to mention, the food comes out fantastic.
Ingredients Needed for these Blackstone Pork Chops
- Bone-in Pork Chops
- Favorite Pork BBQ Rub ( I used Traeger’s Pork & Poultry)
- Onion
- Mini Sweet Peppers
- Beer
- Butter or (pork lard)

Preparing your Pork Chops
Lay out your pork chops on a cutting board or clean surface and sprinkle with your seasoning of choice. Flip and repeat. Let sit for a bit before cooking. OR wrap and place in the refrigerator until it’s dinner time.
For the Beer Soaked Peppers & Onions
Slice up a few mini bell peppers and half of an onion. Add them to a small bowl. Then add in a few dashed of the BBQ rub along with about half a beer (drink the other half). I used 6 oz. of Dos Equis but your favorite lager will work, too. Let marinate for a few or same thing- you can toss them in the refrigerator with the pork until it’s go time.
When it’s time to cook, I drained the beer out and fired up the griddle to medium heat. I added a little lard (or butter) to the griddle and started cooking these peppers and onions first before adding the pork chops on.
How to Cook Pork Chops on the Blackstone
To start, make sure your Blackstone is preheated to medium heat. Add on some butter (or pork lard if you have it) and place the pork chops on the griddle.
How long to cook pork chops on the Blackstone
Let the pork chops cook for about 3-4 minutes before flipping. Let cook another 3-4 minutes. Or until they reach an internal temperature of 145°F.
Once your pork chops are cooked to perfection, add on the peppers and onions (if using) and remove them from the griddle and let them rest for a few minutes before serving.
Pair them with some roasted vegetables or mashed potatoes for a complete meal that will have everyone coming back for seconds.
Optional Pork Chop Toppings
One great thing about cooking pork chops on a Blackstone is that you can easily add some delicious toppings or sauces while they cook.
If you want to change it up- here are some other great options for grilled pork chop toppings:
- Sautéed apples and or onions for a sweet and savory twist
- Drizzle a little balsamic glaze for a elegant touch
- Cooked mushrooms
- Melted cheese
Pro Tips for the Best Pork Chops on the Blackstone
- Do not over-cook (use your trusty meat thermometer)
- Let the seasoning soak in for a little white before you cook
- Let the chops rest for a few minutes before enjoying

Juicy Pork Chops on the Blackstone
Equipment
- Griddle, flat top, or cast iron skillet
Ingredients
- 4 bone-in pork chops
- Pork BBQ Rub
- 3-4 mini sweet bell peppers sliced
- 1/2 onions sliced
- 6 oz. beer
- 2-3 tbsp butter or pork lard
Instructions
- Season both sides of the pork chops with the BBQ rub. (Let sit for a few until dinner time or cover and refrigerate.)
For the Peppers and Onions
- Slice the peppers and onions and place in a small bowl. Add in a few dashes of BBQ rub and the beer. (Let marinate for a few or cover and refrigerate).
- Heat up the Blackstone Griddle over medium heat and add about 1 tbsp butter to the surface. Drain the beer from the peppers and onions and add to the flat top. Let cook for a few minutes before adding the pork chops.
For the Pork Chops
- On the other side of the griddle, add some more butter. Add the pork chops and let cook about 3-4 minutes on each side or until the internal temperature reaches 145 degrees F.
- Add the peppers and onions on top of the pork chops and remove from the griddle.
- Let rest for a few minutes before serving. Enjoy!
