Lemon Cookie Parfaits

If you are a lemon dessert lover like I am, than you need to try these Lemon Cookie Parfaits! These lemon parfaits come together in about 10 minutes and a delicious cool treat that are great for Spring, brunch, Summer, or anytime of the year.

I have been obsessed with making dessert parfaits lately! I made my strawberry pie filling parfaits and peanut butter chocolate ones over the last few months. Well my husband was craving dessert and he LOVE lemon so knew I had to make this lemon pudding dessert since its quick and no baking required.

  • They are great single servings so have a treat in the refrigerator for a few days
  • They are pretty enough for entertaining (Summer parties, Mother’s Day, etc)
  • Budget Friendly

Seriously this dessert cost about five bucks to make. I just used the store brand lemon sandwich cookies but you can use Lemon Oreos if you want. The Walmart or Kroger brand is about $3.00 for double the amount of cookies. And they taste great in this no bake lemon dessert!

What you need for this Lemon Parfait Dessert

  • Instant Lemon Pudding
  • Milk
  • Whipped Topping (Cool Whip)
  • Lemon Sandwich Cookies

I just grabbed some little clear cup/bowls that they sell at the $1 store. Of course you can make these in mason jars, glass of choice, or if you own parfait cups. Or just want to make it is a baking dish or bowl? Go for it! Just layer and enjoy!

How to make these Easy No No Bake Lemon Cookie Parfaits

First whisk together your cold milk and the lemon pudding package in a mixing bowl until thickened. Set aside.

Next crush the lemon cookies I just broke them by hand then smashed them with a potato masher. You can toss them in your food processor or blender too but I am lazy plus like them a little with a little bigger pieces.

Then get to layering. Add a large spoonful of the lemon cookie crumbs to your cups. Then a spoonful of the lemon pudding. Then add a little more cookie crumbs.

Assembling lemon parfaits

Add a large spoonful of whipped topping on top and additional crumbs for garnish. If you have strawberries you can add those too for some color!

Refrigerate until ready to serve. You can eat them right away but a few hours in the refrigerator will soften the cookie layers. They are best after about 4 hours in the refrigerator.

How long are these No Bake Lemon Cookies Good For?

I’d say these are best kept refrigerated for 3-4 days. I just covered them individually with plastic wrap. So they were perfect for a few nights after dinner when we wanted something sweet.

Easy Lemon Parfait Cups

Lemon Cookie Parfaits

These Lemon Cookie Parfaits are easy to make with just four ingredients! Light, refreshing and the perfect lemon dessert any time of the year.
Prep Time 10 minutes
Chill Time 4 hours
Course Dessert
Servings 8 servings

Ingredients
  

  • 1 3.4 oz Instant Lemon Pudding
  • 2 cups milk
  • 20 Lemon Sandwich Cookies
  • 1 8 oz. tub of whipped topping

Instructions
 

  • Whisk together the lemon pudding and milk in a medium bowl until thickened.
  • Crush lemon cookies in a dish with a potato masher or toss into a food processor or blender. Leave the crumbs a bit thicker.
  • Spoon cookie crumbs into cups and add a spoonful of the lemon pudding.
  • Add a little bit more cookie crumbs and then add a large spoonful of the whipped topping on top.
  • Garnish with a bit more cookies, a lemon slice or strawberry if desired.
  • Refrigerate until ready to serve (best at least 4 hours).
