These green mimosas are perfect when you need something cute but don’t want to spend a ton of time making drinks. There’s no shaking, blending, or complicated steps — just pour, garnish, and serve. The last St. Patrick’s Day party I had I served up a pitcher of green mimosas. It was perfect for my family members who don’t like beer and they were festive. I decided to add a cute little rainbow skewer on top for fun. You obviously can skip that step if you want!

Ingredients Needed for These Green Mimosas

🍀 Champagne or sparkling wine – The bubbly base of your green mimosa. Use your favorite bottle of champagne or prosecco. Make sure it’s chilled so your drinks stay nice and crisp.

🍀 Blue Curaçao – This is what gives the drink that fun green color when mixed with the orange juice. It also adds a slight citrus note.

🍀 Orange Juice – Balances everything out and helps create that signature green shade. Fresh or store-bought both work great—just make sure it’s cold.

🍀 Rainbow Candy (Dollar General) – This is what makes your leprechaun mimosa extra festive! It creates the rainbow effect on top and makes the drink party-ready.

🍀 Toothpicks – Used to build your rainbow garnish. They hold everything together and rest perfectly across the top of the glass.

🍀 Marshmallows – These act as the “clouds” at the end of your rainbow. It’s such a simple touch, but it makes the cutest finishing detail.

How to Make Luck Of the Irish Green Mimosas

Step 1: Add the Blue Curaçao. Fill a champagne glass about one-third of the way with blue curaçao. This gives the drink its beautiful green color once layered.

Step 2: Pour in the Orange Juice. Slowly fill another third of the glass with orange juice. Pour gently so the layers stay pretty.

Step 3: Top with Champagne. Carefully top the drink with champagne until the glass is full. Watch the magic happen as the colors mix into a festive green mimosa.

Step 4: Make the Rainbow Garnish. Take a toothpick and carefully thread on rainbow candy. Add mini marshmallows to each end to look like clouds. Place the rainbow right on top of the glass for the cutest leprechaun mimosa garnish.

Additions & Substitutions

  • Swap champagne for prosecco if that’s what you have on hand.
  • Use sparkling cider for a non-alcoholic version.
  • Add a sugar rim for extra sweetness.
  • Chill all ingredients beforehand so your Green mimosas stay nice and cold.

Luck of the Irish Green Mimosas

Raise a glass to good times and green vibes. These sparkling citrus green mimosas brings the fizz, the fun, and just the right amount of Irish cheer.

Ingredients
  

For the Green Mimosas
  • Blue Curaco
  • Champagne or Sparkling wine
  • Orange Juice
For the Rainbow Garnish
  • toothpicks
  • Rainbow Candy
  • Mini marshmallows

Method
 

For the Green Mimosas
  1. Add a little of the Blue Curacao to the champagne flute.
  2. Then add in the orange juice until the glass is two-thirds full.
  3. Top with the champagne or sparkling wine.
For the rainbow candy garnish
  1. Take a toothpick and thread a piece of the rainbow candy to form a rainbow and add two mini marshmallows to both ends.
  2. Place the garnish on top and serve.

Pitcher/Carafe Instructions (Perfect for a Party)
  1. Add the mimosa ingredients to a pitcher or carafe and chill until ready to serve.
    Make garnishes a head of time and serve next to the carafe.
    Place the pitcher in a bowl of ice.
