A couple weeks ago we had 90 degree weather for about a week straight. I often cook on my flat top for quick dinners on hot nights but I haven’t busted out the smoker in a while, so I wanted to make something for dinner on the healthier side.I have made Traeger stuffed peppers before and they are always an easy and fun cook. So I grabbed some groud chicken and peppers and whipped up this concoction! I had every intention of adding g rice but forgot to buy some so these are low carb.

Ingredients Needed for these Ground Chicken Stuffed Peppers

🫑Bell Peppers- I grabbed three and loaded them up but 4 will work, too!

🫑Ground Chicken-
I chose ground chicken for a healthier option since we eat a lot of red meat. You can use ground beef, chorizo, or turkey!

🫑Salsa –
This is the sauce/binder. Just grab the flavor/spice level of your liking!

🫑Cheese-
Mexican style shredded cheese is what I used, you can easily swap for a Colby Jack or even Pepper Jack for some heat.

🫑Taco Seasoning-
I had a packet of low sodium taco seasoning, but alternatively you can use a fajita blend, or just some cumin, chili powder, or other seasonings of your choice!

🫑Cream Cheese-
You will need a half a block of softened cream cheese. This also acts as a binder for the filling.

🫑Green Onions-
I had green onions left from my Taco Tortellini recipe, so used that. You can use white, Spanish, or yellow onion as well.

How to make these Smoked Smoked Stuffed Peppers with Ground Chicken

Step 1: Prep Peppers. Wash and cut the peppers in half lengthwise. Take out the seeds. I left the part of the stem just to hold the filling in better.

Step 2: Make filling. In a mixing bowl, combine the ground chicken, taco seasoning, green onions, salsa, cream cheese, and shredded cheese. Mix until well combined.

Step 3: Stuff peppers. Add the mixture to the peppers. Cover and refrigerate until ready to cook if preparing ahead of time otherwise transfer to smoker.

Step 4: Smoke. Transfer to the smoker and place directly on smoker grates or in a baking dish. Let smoke at 225 degrees for about 3 hours.

Step 5: Add cheese. Sprinkle with a bit more cheese on top and finish cooking until the internal temperature reaches 165 degrees F. Check the temp with a trusty meat thermometer.

Serve warm with additional salsa, hot sauce, sour cream, green onions, or toppings of choice!

Additions & Substitutions:

  • Like it spicy? Add a chopped jalapeño or pickled jalapeños to the meat mixture.
  • Different protein? Can make these with ground turkey, chorizo, or beef!
  • Want to add rice? Go ahead and grab a package microwave cilantro flavored rice and add that to the mixture. You will just need probably at least 2 more peppers.

Can you make these stuffed peppers in the oven?

Absolutely! Just make as directed and bake at 350 degrees until the chicken is cooked throughout. Probably about 45 minutes!
