Are you a big strawberry fan? I know I am and so are my kids. Well what about a nice frozen dessert for the Summer? I wanted to make a new easy no bake summer pie recipe, so this Mile High Strawberry Cookies N Cream Pie was born! And I love it. Sofie LOVES Oreos so I had some and decided I wanted to make a fun new dessert for the warmer months.
This Mile High Strawberry Cookies N Cream Pie is so easy to make with just FOUR ingredients, yes you read that right. It only takes a few minutes to put together. The hardest part is waiting for it to freeze, and then to thaw slightly before eating it.

Strawberries are in season this month and although this recipes uses frozen sweetened strawberries, they inspire me all month long. Strawberries make excellent dessert toppings and recipe components. Not only are they sweet and tasty, they have many nutritional benefits as well.

How to Make this Strawberry Cookies N Cream Pie
First let the frozen sweetened strawberries sit out on the counter until almost thawed. And then grab out you pie crust, the vanilla ice cream , and Oreos (or store brand is fine).
Allow the ice cream to soften just a bit, too.
Then crush or break the Oreos, I just used my hand to break them into pieces.
In a large mixing bowl combine the softened ice cream, the sweetened strawberries, and crushed Oreos and mix until all is combined.
Then carefully and slowly pour the ingredients into your graham cracker crust. Since the mixture is slightly Icey you should be able to pour it to create the “mile high” effect.
Then place the pie on a plate or pan that will fit in the freezer. Freeze overnight.
When ready to serve, let thaw for about 25-30 minutes before attempting to cut and serve.

Additions & Substitutions:
- Go ahead and use strawberry ice cream or even chocolate if you want!
- Have fresh strawberries? Go ahead and sweetened them yourself by adding sugar and letting them create their own juices.
- You could drizzle a little chocolate sauce over the pie or even some whipped cream for serving!

Mile High Strawberry Cookies ‘n Cream Pie
Ingredients
- 1 Graham Cracker Pie Crust
- 3 cups of vanilla ice cream
- 2 15.5 oz containers of frozen sweetened strawberries thawed mostly
- 2 cups of crushed Oreo cookies divided
Instructions
- Pull the frozen strawberries out and let thaw mostly. ( a little Icey is fine).
- Crush the Oreos or break into pieces (by hand is fine).
- Allow the vanilla ice cream to soften slightly.
- In a large mixing bowl mix the ice cream together with strawberries and 1 1/2 cups of crushed cookies in a bowl.
- Carefully and slowly pour the mixture into the pie crust. (this will be high so pour into the center and let build the "mile high" effect.)
- Top with the remaining Oreo pieces.
- Place on a plate and freeze overnight.
- Let thaw about 25-30 minutes before cutting and serving and enjoy.
- Store the remainder of the pie back in the freezer covered and repeat thawing for next serving.
