Well Summertime here in Michigan means some nice fresh fruit recipes for me! I decided to bake with some fresh raspberries and came up with these Raspberry Pecan Dessert Bars! A few easy layers of deliciousness makes these fruit bars perfect for a morning snack or as a dessert!
Mike and I planted 2 raspberry plants about 3 years ago…which has now turned into a huge raspberry patch on the side of our house. Every year, more and more plants keep multiplying and we actually get tons on raspberries which is super fun! Except the fact that they are growing out of our normal bushes, in the flower bed, and even in the grass. But any who the fresh raspberries are perfect, juicy, and plentiful all Summer long! That is why I came up with these Raspberry Pecan Dessert Bars.
For these Raspberry Pecan Dessert Bars, we start with layers of corn cereal, sweetened condensed milk, fresh raspberries, flaked coconut, and pecans!! Yes! A little different, but very sweet and very good! They almost reminded me of 7 layer bars if you have every had those except a raspberry version!
Desserts with Fresh Raspberries
I love baking with fresh fruit! These dessert bars may not look the prettiest but you are getting the benefits of eating the whole fruit! You definitely can use raspberry jam or preserves if you would prefer.

What you need for these Raspberry Pecan Dessert Bars
- Chex Mix Cereal (or similar)
- Sugar
- Butter
- Sweetened Condensed Milk
- Raspberries
- Pecans (or walnuts)
- Flaked Coconut
How to make this Easy Raspberry Pecan Dessert Bars
First start by grinding the cereal into crumbs. Then mix with melted butter and sugar. I usually do this right in my food processor and pulse until combined.
Then press the mixture into the bottom of your baking dish. I used my Pyrex Casserole 8×12 dish but an 8×8 pan or similar will work just fine. Drizzle 1/2 of the sweetened condensed milk over mixture.
Refrigerate crust for about 10 minutes. Next add the fresh raspberries on top of crust.
Then add the chopped pecans and flaked coconut. Drizzle the other half od the sweetened condensed milk over those layers. Bake at 350 degrees for about 25 minutes. Once cooled, cut and serve!
How to store these Raspberry Pecan Dessert Bars
Since we are using fresh raspberries, place bars into refrigerator and try to consume within 3 days.

Raspberry Pecan Dessert Bars
Ingredients
- 3 cups Corn Cereal Chex or Similar
- 1/8 cup sugar
- 1/4 cup butter melted
- 3/4 cup sweetened condensed milk divided
- 1 1/2 cups fresh raspberries or about 6 oz preserves
- 1/2 cup flaked coconut
- 1/2 cup pecans or walnuts
Instructions
- Preheat oven to 350 degrees.
- Use a food processor or blender to grind up the cereal into crumbs.
- Mix cereal crumbs, sugar, and melted butter in a small bowl.
- Press into the bottom of a sprayed 8×12 or 8×8 baking dish.
- Drizzle 1/2 of the sweetened condensed milk over the crust mixture.
- Refrigerate the crust for about 10 minutes.
- Next add the raspberries on top of crust.
- Then sprinkle with the pecans and coconut flakes.
- Drizzle the rest of the sweetened condensed milk over the layers.
- Bake for about 25 minutes or until the edges start to brown a bit.
- Once cooled, cut into bars and enjoy.
