You can make zucchini noodles several ways by spiralizing the zucchini or if you don’t have a way to do that you could also use large shreds of the zucchini for this recipe as well. Zucchini noodles make a fantastic alternative to traditional pasta if you are seeking a healthier option.
How to make zucchini noodles
There are several ways that you can make noodles with zucchini. I bought this kitchen gadget years back which has a spiralizer option but is also great for baking, too.
- Spiralizer method: Use a spiralizer tool to create long, thin strands of zucchini noodles effortlessly. Simply insert the zucchini into the spiralizer and turn the handle to produce beautiful spirals of noodle-like shapes.
- Handheld julienne peeler method: If you don’t own a spiralizer, you can use a handheld julienne peeler instead. Just peel the zucchini lengthwise until you reach its core, creating thin strips resembling spaghetti.
- Mandolin slicer method: A mandolin slicer can be used to slice the zucchini into long ribbons that mimic fettuccine-style noodles.
Ingredients needed for this easy zucchini noodle dish
- Zucchini– a smaller to medium sized zucchini will work for this recipe since its just for one serving. If you want more use a large zucchini!
- Cherry Tomatoes– I love cherry tomatoes sauteed. They are sweet and make the perfect addition to this zucchini recipe.
- Garlic Expression Vinaigrette– I bought this vinaigrette/ marinade to make my Creamy Italian Chicken Pasta and love it. It is pretty strong with garlic so you only need a little. It makes the perfect sauce along with the juice from the zucchini.
- Parmesan– I sprinkle a bit of parmesan cheese on at the end but you can leave it out if you are looking for vegan zucchini pasta instead.
- Red pepper flakes (optional) – I love a little heat pretty much on anything so I also sometimes add red pepper flakes.

First start by rinsing your zucchini off and cutting off the top. Grab your spiralizer or method of choice to make two cups of zucchini noodles. I also sliced the cherry tomatoes in half.
How to Cook Zucchini Noodles on Stove
Grab a small pot or sauté pan and add the zucchini noodles, the Garlic Expressions Vinaigrette, and the cherry tomatoes.
Cook over medium to high heat for abut five minutes until the cherry tomatoes have softened and the zucchini noodles are tender to your liking.
Add the mixture to your bowl and top with some parmesan cheese and red pepper flakes if desired. Enjoy warm!
