With just a few simple ingredients and seasonings, you can have a rotisserie style chicken right at home. This all cooks together so no need for extra steps. And you can use the leftover chicken for lots of other meals!

How to make this easy Roasted Chicken Recipe in your Slow Cooker

All you have to do is layer the potatoes, onions, and carrots in the bottom of your slow cooker.

Then rinse and pat dry your young chicken. Season the chicken and lay it breast side up. Cover and cook low 6-8 hours or high 4-5 hours. Then during the last 30 minutes of cooking add in the Summer squash.

Boom done- nice easy, healthy meal that comes together in just a few steps! Enjoy 🙂

How to make roasted chicken in the slow cooker with summer vegetables

Slow Cooker Roasted Chicken and Summer Vegetables

This easy slow cooker meal is a healthy alternative to a rotisserie style chicken!
Prep Time 5 minutes
Cook Time 4 hours
Course Main Course

Equipment

  • Slow Cooker

Ingredients
  

  • 5-6 lb young chicken
  • 7-8 small gold potatoes or similar
  • 1 bundle Rainbow Carrots (about 8 small carrots cut in half)
  • 1/2 onion quartered
  • 1 yellow summer squash sliced
  • 1/2 tsp sage
  • 1 tsp paprika
  • salt & pepper to taste

Instructions
 

  • Remove neck and giblets from young chicken and rinse and pat dry.
  • Spray the slow cooker with some cooking spray.
  • Line the bottom of slow cooker with potatoes, carrots, and onions.
  • Place the chicken over the vegetables breast side up.
  • Rub the chicken with seasonings.
  • Cover and cook on high for 4-5 hours or low 6-8 (adding the summer squash during the last 30 mins of cooking.)

Notes

Tips- cook until veggies are soft and internal temp of chicken is at least 165
