Grilling and BBQ season is right around the corner, or if you are like us it is all year long. I made these Smoked Poblano Pepper Stuffed Chicken Breasts on the smoker and was excited to share these little bundles of deliciousness with you!

One of my most popular posts on this blog is my Air Fryer Jalapeno Popper Stuffed Chicken so I got to thinking I could do a version on the grill/ smoker. These Smoked Poblano Pepper Stuffed Chicken breasts are easy, different, and perfect for the non-spicy eaters in your family. Although I did use a hot pepper cheese, any cheese would do!

I made these bacon wrapped stuffed chicken breasts right on our Traeger Wood pellet smoker, but a grill or different type of smoker would do just fine. You could also bake or Air Fry them, too! Like usual, I kept this recipe simple with just a few ingredients!

What you need for these Smoked Poblano Pepper Stuffed Chicken Breasts

  • Thin sliced chicken breasts
  • BBQ Rub/ Seasonings of choice ( I used Gold Star Chicken BBQ Rub)
  • Cream Cheese
  • Poblano Peppers
  • Hot Pepper Cheese
  • Bacon
  • Toothpicks

How to make these bacon wrapped poblano pepper stuffed chicken breast on the smoker

To make these stuffed chicken breasts, first start with thin sliced chicken breast. If you have regular chicken breast, make sure to pound them out a bit. Then season with your seasonings of choice. I used a BBQ rub and rubbed each side the the chicken. I had found some hot pepper cheese at the store so shredded that.

Then in a medium bowl combine the softened cream cheese, shredded hot pepper cheese, and diced polblano peppers. Mix until well combined.

Spoon the cream cheese mixture onto each chicken breast. Roll the chicken breast up and secure with a toothpick. Then wrap each one with a few piece of bacon. I used a whole package of bacon so just divide the bacon amongst the chicken breasts. Wrap and tuck. If you need to use another tooth pick go for it.

Place the chicken bundles directly onto the grill or smoker grates. Our smoker has meat probes so I stuck one of those in there. I also added a pan underneath to catch any drippings from the juices and cheese.

Smoke at 250 degrees for about an hour and a half or until the bacon is cooked to your liking and the chicken in at least 165 degrees internally. Remove toothpicks before serving and enjoy!

What to serve with these Smoked Stuffed Chicken Breasts

Want to bake or Air Fry these instead?

No worries, follow all the same step and bake at 350 degrees for about 45 minutes until the bacon is cooked and the chicken reaches 165 degrees. Or can Air Fry these too for about 25 minutes at 375 degrees (flipping halfway).

Smoked Poblano Pepper Stuffed Chicken

Equipment

Ingredients
  

  • 6 Chicken Breasts thin sliced
  • 1 8 oz. Package of Cream Cheese softened
  • 1 Poblano Pepper diced
  • 1 Cup Shredded Hot Pepper Cheese
  • Chicken BBQ Rub or seasonings of choice to taste
  • 1 16 oz, Package of bacon or about 12-15 slices

Instructions
 

  • Preheat the smoker to 250 degrees.
  • Lay chicken breasts out and season with BBQ rub.
  • In a medium mixing bowl combine the softened cream cheese, poblano peppers, and hot pepper cheese.
  • Mix until all ingredients are well incorporated.
  • Spoon the cream cheese mixture evenly onto each chicken breast.
  • Roll the chicken up and use a toothpick to secure.
  • Wrap each chicken breast with 2-3 pieces of bacon and tuck in the ends.
  • Place on the grill or smoker grates and close the lid. I placed a pan underneath to to catch drippings.
  • Smoke for about 1 1/2 – 2 hours or until the bacon is cooked and the internal temperature of the chicken is at least 165 degrees.
  • Remove tooth picks and serve hot!

Notes

Notes: If using whole package of bacon, some bundles may have 2 pieces of bacon, some may have 3. etc
