In my efforts to detox somewhat from our camping trips, I made these Spicy Taco Stuffed Zucchini. I was actually surprised how much I liked them. This is a low carb recipe that you can feel good about eating! Perfectly cooked zucchini stuffed with a taco flavored ground turkey and veggie filling. And of course a little cheese.
When we got home there was a ginormous zucchini hiding in the garden and that got me to thinking that I wanted to make something different besides zucchini bread. I ended up buying a couple normal sized zucchini for this stuffed zucchini recipe and then made a couple loaves of banana zucchini bread with the one from the garden.
This Spicy Taco Stuffed Zucchini recipe is simple with fresh ingredients and a little seasoning.
How to make these Spicy Taco Stuffed Zucchini
First start by cutting the zucchini in half lengthwise and spooning out the center. Reserve the center and then dice the onion, tomatoes, and jalapeno.
Then make the meat mixture. Brown the ground turkey in saute pan with the jalapeno, onion, and reserved zucchini. Add salt and pepper and chili seasoning. Then stir in tomatoes and cheese.
Spoon mixture into zucchini and top with extra shredded cheese.
Bake at 350 degrees F for about 30 minutes top with sour cream, hot sauce, or toppings of choice!

Spicy Taco Stuffed Zucchini
Ingredients
- 3 medium zucchini
- 1 lb ground turkey
- 2 Roma tomatoes diced
- 1 small to medium onion diced
- 1 jalapeno diced
- 2 tsps chili powder
- 1 tsp garlic powder
- salt and pepper to taste
- 1 1/2 cups shredded pepper jack cheese divided
Instructions
- Wash the zucchini and cut it in half lengthwise.
- Using a small spoon, scoop out the middle of the zucchini and set to the side.
- In sauté pan over medium heat add ground turkey, onions, reserved zucchini, and jalapenos.
- Cook until turkey in browned and veggies are fragrant.
- Drain and add seasonings and tomatoes, stir and let simmer about 2 minutes.
- Add 1 cup of cheese and stir.
- Line baking dish with foil, and spray with non stick cooking spray.
- Spoon meat mixture into zucchini and place on foil.
- To with remaining cheese.
- Bake at 350 for 30 minutes.
- Serve hot with all of your favorite toppings!
