I have a nice quick,healthy, and tasty lunch idea for you! These Three Ingredient Salsa Zoodles are so easy, fun, and delicious!

What are ZOODLES, you may ask?? They are zucchini spiralized into noodles that eat like a noodle! Um yep…once I tried some made from cucumbers I knew I had to make some from zucchini and I love these Three Ingredient Salsa Zoodles!

I make these Salsa Zoodles for a quick healthy lunch for myself. These zoodles come together in about 10 minutes! This is just one serving so if you want to make a meal out of it or for two, just double or triple the recipe!

What do you need to make these Three Ingredient Zoodles?

  • Zucchini
  • Bell Pepper
  • Salsa
  • Veggie Spiralizer

I bought my MIL a veggie sprializer for Christmas and she was loving it so I decided to get one and have been having some fun with it too. The first thing I did was created this awesome lunch idea~! Check out the Vegetable Spiralizer that I use on Amazon.com!

First, use a sprializer to transform your zucchini into “zoodles”.

Then slice up a yellow bell pepper (or whatever you have on hand). I used 1 tbsp of olive oil and sauteed the bell pepper for a minute until softer.

Then add all the ingredients to the sautee pan and heat until the salsa is hot!

AND THATS IT! Top with cilantro, cheese, hot sauce or toppings of choice!

Equipment

  • vegetable spiralizer

Ingredients
  

  • 1 tbsp olive oil optional
  • 1 medium zucchini cut in noodles
  • 1/3 cup salsa
  • 1/2 yellow bell pepper sliced

Instructions
 

  • Using a spiralizer, turn the zucchini into "zoodles"
  • In a saute pan heat olive oil and add peppers.
  • Sautee for about 1 minute.
  • Then add the rest of the ingredients and heat until hot (about 2 minutes)
  • Top with hot sauce, cheese, sour cream, cilantro, or toppings of choice!

Notes

  • if not using Olive oil, just add all ingredients together and heat until hot and peppers are soft.
