I actually am not a huge fan of traditional chicken pot pies…sorry. I think I don’t care for pie crust which is crazy…but I DO love me some flaky crescent rolls and always enjoy pot pie with more of a pastry style crust. That is why when I make pot pie…we make them with crescent rolls. This dinner would be great to take to someone in need, for busy weeknights, or if you have your parents over for dinner. It makes a little larger of a portion but of course you can freeze a few pieces as well or take the leftovers for lunch.

Ingredients Needed for Chicken Pot Pie with Crescent Rolls

| 🍲Crescent Rolls – These make the perfect flaky base and top layer for the casserole. I use the regular crescent roll tubes and press the seams together to form a crust. 🍲 Cooked Shredded Chicken – This is a great way to use up leftover chicken or grab a rotisserie chicken to save time. 🍲 Frozen Mixed Vegetables – Thaw them (at least slightly) first so everything bakes evenly. This adds color and keeps things classic. 🍲 Frozen Hash-browns Shredded or O’Brien Style – These bulk up the casserole and make it extra cozy. Make sure they’re slightly thawed before mixing. 🍲 Cream of Chicken Soup – This is the base of the creamy filling and pulls everything together. 🍲 Chicken Broth – Helps thin out the mixture just enough so it bakes up perfectly. 🍲 Garlic, Pepper, Thyme (or Sage) and Salt – Simple seasonings to give the filling just the right amount of flavor. |

How to Make Chicken Pot Pie Casserole with Crescent Rolls
Step 1: Prep the oven and dish. Preheat your oven to 350 degrees and lightly grease a 9×13-inch casserole dish.
Step 2: Bake the bottom layer. Unroll one tube of crescent rolls and press it into the bottom of the dish, sealing the seams together. Bake for 15 minutes until just set.
Step 3: Mix the filling. In a large bowl, mix together the shredded chicken, thawed vegetables, hash browns, chicken broth, cream of chicken soup, and seasonings until combined.
Step 4: Assemble the casserole. Pour the chicken mixture over the baked crescent layer and spread it out evenly. Unroll the second tube of crescent rolls and place it on top, pinching the seams together as best you can. Cut a few small slits in the top.
Step 5: Bake and rest. Bake for another 20-25 minutes, until the top is golden. Let it sit for about 5 minutes before slicing and serving.
